Tip

This makes a thick ganache which is perfect for use under foundant when covering cakes. It doesn't take a great deal of time for it to cool either making it nice a quick.

If you're looking for a chocolate dip, you could also use this ganache. Its thick but at room temperature, great for dipping in!

This was a perfect recipe to make as I rushed out the door with a barely out of the oven cake! The travel allowed it to cool enough to spread perfectly on the cake - and it was delicious!!!!

So easy & perfect! I'm a cake decorator & it's brilliant in between layers, as a ganache covering or as a layer under fondant.
I experimented and used coconut cream (the thick part that settles on top of the can) and it worked perfectly- still set.
I've used aldi cooking melts (white, dark, milk) and nestle melts. Works perfect if you halve the recipe also.

  • Fantastic recipe, great

    Submitted by MrsQ on 23. June 2016 - 19:55.

Fantastic recipe, great consistency. I did a crumb coating when it was a little runnier, then let it cool to a thicker consistency for the final coating for under fondant. Was a little bit tricky to ice when it was thicker, so I heated my palate knife up in hot water which helped to smooth out the ganache to a glossy finish. Thanks
