Clone of No-Bake Chocolate Cookie Balls (Gluten Free Grain Free, Paleo, Dairy Free)

Ingredients

Mixture

  • 60 grams pecans
  • 80 grams Coconut Sugar (or granulated sweetener)
  • 150 grams Dairy alternative milk
  • 100 grams margarine
  • 1/4 teaspoon salt
  • 25 grams unsweetened cocoa powder
  • 190 grams Natural Peanut Butter
  • 65 grams unsweetened shredded coconut
  • 1 teaspoon natural vanilla essence
  • crushed pecans or coconut for rolling

Recipe's preparation

    Heating, mixing, milling
  1. Place Pecans or other nuts into bowl and chop on Speed 6 for 2-3 seconds. If you would like the consistency finer repeat. Set aside

  2. Add sweetner, milk, margarine, salt, and cocoa to bowl. Cook for 6 minutes, 100C, speed 1, with MC removed. (The mixture needs to boil for 1 minute)

  3. Add nut buttter and stir on speed 3 until melted.

  4. Add nuts, coconut and vanilla. Mix for 20 seconds on speed 3

  5. Spoon the mixture by the tablespoon, and roll in either coconut or crushed pecans, or both. onto a tray.

  6. These cookie ball can be eaten right away or chilled for a firmer ball.

    Can add sesame seeds to recipe if your family tolerates them tmrc_emoticons.)

    If nut allergy is present, substitute nut butter for a seed butter (sunflower maybe) & change pecans to mixed seeds/dried fruits etc

Tip

Mixture is very sticky so placing in the fridge for a short time before rolling into balls is easier.

Peanut Butter could be substituted for almond butter.
