Dark Chocolate Custard

Ingredients

Custard

  • 240 g Milk
  • 300 g thickened cream
  • 1 teaspoon Vanilla Bean Paste
  • 4 egg yolks
  • 1 tablespoon cornflour
  • 70 g caster sugar
  • 100 g dark chocolate

Recipe's preparation

  1. Place caster sugar and chocolate in TMX bowl and mill for 20 seconds on speed 9.  Scrape down sides of bowl.

  2. Add milk, cream, vanilla paste, egg yolks and cornflour and cook for 15 minutes at 90 deg, speed 3 with MC in place.

Tip

This recipe is nice served warm and once cold has the texture of Chocolate Yogo.
