Easy Chocolate Molten Cake

Ingredients

Cakes

  • 100 grams Dark chocolate (70% cocoa)
  • 100 grams Butter
  • 150 grams light brown sugar
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 50 grams plain flour

Recipe's preparation

  1. ·         Preheat oven to 200 degrees C if cooking immediately

    ·         Grease 4 ramekins (I also cut a circle of baking paper for base)

    ·         Chop chocolate in TM for 5-10 seconds on speed 8

    ·         Add butter. Melt for 2 minutes at 50 degrees speed 3 (you may want to scrape down in the middle). Allow to cool to 37 degrees (doesn't take long at all)

    ·         Add brown sugar and mix on speed 2-3 until combined

    ·         Whilst still mixing, add eggs one at a time through center of lid followed by vanilla extract. Mix until just combined

    ·         Turn TM off and measure in flour. You may wish to mix in with TM but I just used a silicon spatula to combine so as not to overbeat flour

    ·         Divide into 4 ramekins 

    ·         At this point, mixture can either be refrigerated for later use (great for preparing early before entertaining) or baked for 10-12 minutes immediately. (I would leave out of fridge for an hour or so before baking as molten cakes are so dependent on being baked for the perfect amount of time)

    ·         Cakes are ready when tops are firm but middle still feels squishy. It may be necessary to add a couple of minutes extra but don't overcook or you will lose the molten component

    ·         Run knife around edge, place plate on top of ramekin and quickly turn over then remove carefully. Note, cakes can be kept in ramekins for ease if you prefer but you lose the lava effect. Don't line base with paper if serving in ramekin. Serve with vanilla ice-cream and Raspberry Coulis if you wish.

Tip

Cakes can also be cooked in the Air Fryer for 7-8 minutes on 200 degrees C

    I made these tonight as a treat for the family after dinner. Oh wow, so easy and absolutely delicious! Thank you for such a great recipe.

    (I made the mixture and poured into ramekins when I got home from work. Left on bench and put in oven after dinner. Awesome!).

    Thanks Tess76 tmrc_emoticons.) I think the current instructions would be fine for the TM5 and can't see any issues with doubling the recipe except perhaps that you may need an extra minute or so when melting your chocolate. Good luck and let me know how it turns out tmrc_emoticons.)

    I had a sweet tooth after dinner this evening and was stoked to find i had all the ingredients in my pantry for this AMAZING dessert! It was so quick and easy to prepare and when I cut into the cake I felt like I belonged on one  of those cooking competition shows! It was like a chocolate volcano erupting and ooooooooozing out this delicious chocolate lavatmrc_emoticons.) Thankyou so much for this recipie it was demolished by the whole family and will definitely become a regular treat in this household
