Fruit Salad Pie with Fruit salad Custard

Ingredients

8 portion(s)

Step 1 :- Short Crust Pastry (from EDC)

  • 400 grams plain flour
  • 200 grams butter (TM), Chilled & Cubed
  • 1/2 tsp salt
  • 120 grams water, Chilled
  • 1 egg, (for egg wash)
  • 60 grams Milk, (for egg wash)

Step 2 :- Stewed Fruit Puree'

  • 3 Kiwi Fruit, (Top & Tailed - to take woody core off)
  • 3 Fuji Apples, Quatered (stem taken off)
  • 1 Peckham Pear (large), Quatered (stem taken off)
  • 3/4 small punnet of strawberries, (whole - leave the leaves on)
  • 75 grams Sweet n Tangy Dried Cranberries
  • 1 Lemon (juice of 1 lemon), Juice of 1 lemon needed only
  • 200 grams raw sugar

Step 3 :- Pie Filling

  • 3 Kiwi Fruit, (Take ends off & throw away) Peel skin off but leave a little "flesh" on the skin, & set aside in a seperate bowl. Slice long ways in half then mediumly slice the halve. Set aside in seperate bowl.
  • 1 small punnet of strawberries, (chop tops off with leaves - place in bowl with kiwipeel) thinly slice and place in seperate bowl
  • 2 Large Peckham Pears, Quater & take out core & seeds - place in bowl with kiwipeel) Mediumly slice quaters up and set aside in seperate bowl
  • 3 Fuji Apples, Quater & take out core & seeds - place in bowl with kiwipeel) Mediumly slice quaters up and set aside in seperate bowl
  • 75 grams Sweet n Tangy Dried Cranberries

Step 4 :- Fruit Salad Custard

  • 1/4 tsp cinnamon (ground)
  • 1/4 tsp Mixed spice (ground)
  • 1/4 tsp organic vanilla essence
  • 100 grams raw suger
  • 80 grams Corn Flour (GF)
  • 2 eggs
  • 700 grams Milk
  • Left Over Egg Wash
  • Peelings, from set aside Bowl

Recipe's preparation

    Step 1 :- Short Crust Pastry (based on recipe in EDC)
  1. Place flour, butter & salt in the TM bowl and mix for about 10 seconds on speed 6 untill mixture resembles breadcrumbs

    Set dial to close lid position

    Add water and knead for 1 minute on interval speed to form dough

    (add a little more water if necessary to bind)

    place on bread matt

    Seperate into 3 portions

    roll out one portion, to the shape of the base of your baking tin.

    (i used a 22cm spring sided baking tin)

    Line Base of tin

    roll out second portion of pastry and line sides of tin

    roll out 3rd portion and cut into strips for latticing the top of the pie.

    Mix the egg and milk together in a small bowl to use as an egg wash, once pie is together.

  2. Step 2 :- Stewed Fruit Puree'
  3. Place all fruit in TM Bowl

    3 seconds on speed 10

    Add Sugar

    Cook 25mins, Vermoma, Speed 2-3, Reverse

  4. This is the Filling for the Pie, however it is THE SAME fruit n the Fruit Salad Puree'

  5. Step 3 :- Pie Filling
  6. While Fruit is Stewing & Pastry Cooling in the baking tin

    Prepare Fruit (as described in the Ingredients)

    Once Everything is ready, start filling pie.

    Pre-heat oven to 180degree's fan forced

    Start Filling PIe
    I personally started off with my Apples & Lined the base of the pie with slices of apple

  7. scoop some of the Fruit Puree' into baking pan and spread out evenly over the apples

    Repeat for each layer of Fruit, with the Puree' Inbetween, as demonstrated in the following pictures

    place baking tin on a flat pizza tray, incase there is boil over


  17. Place in preheated oven (180 degrees)

    Cook for 45 minutes (or untill golden brown across lattice work)

  20. Step 4 :- Fruit Salad Custard
  21. Using the "Peelings" of your fruit you set aside and any left over flesh of fruit that wasnt needed in the pie filling

  22. add in everything except the milk and eggs into the TM bowl

    Blend on speed 10 for 5 seconds  (untill you get a smooth consistency)

    Add milk and eggs (+ left over egg wash mix)

    blend speed 4 for 5 seconds

    90, Speed 3 12 minutes

  23. this fruit custard doesnt look very appetising, however it tastes divine.

    best served HOT with Pie.

    However you can cook it while pie is cooking and serve it cool with icecream.


  24. there is VERY LITTLE WASTAGE in this Dessert Dish
