Healthy Ferrero Rochers (Protein balls)

  • 1 avocado
  • 1/2 teaspoon Vanilla paste or extract
  • 1 teaspoon stevia extract (or small sachet)
  • 50 g chocolate protein powder
  • 10 g cocao powder (or good quality cocoa)
  • 30-50 g Maple syrup
  • pinch of Himalayan salt
  • 16 hazelnuts, (for centre of each ball)
  • 1/2 - 3/4 Cup hazelnuts
  • 200 g dark chocolate (good quality)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place hazelnuts in bowl. Turbo 2 to 3 times on 1 sec or until you reach a fairly chopped consistency. Do not over mill as you want some roughage. Remove from bowl and set aside. Rinse bowl.

    2. Remove skin and seed of avocado. Cut in half and place in bowl. Chop for 10 secs on spd 5. Scrape down sides and blend on speed 3.5 for 15 secs or until you reach a smooth texture.

    3. Add vanilla, stevia, protein powder, cocao, maple syrup and salt. Blend for 20 secs on spd 5 to 6. Scrape sides of bowl and repeat. Taste the mixture and if you would like it a little sweeter add a touch more maple syrup. The mixture should be the consistency of buttercream frosting.

    4. Scoop a tablespoon of the mixture , place hazelnut in the centre, and roll into a ball and place onto a tray lined with baking paper. Repeat until all mixture if finished. Refrigerate for 1 hour.

    5. Rinse and dry bowl. Place chocolate and coconut oil into bowl and melt for 3 1/2 mins, 50C and speed 2.

    6. While the chocolate is melting, remove balls from fridge and coat each one with chopped hazelnuts.

    7. When chocolate is melted, dunk each ball in the chocolate and remove the excess chocolate before placing back onto the tray.

    8. Refrigerate until firm.

    I'm looking forward to trying this one out! But can you pls tell me what the 3rd last ingredient should be?  'cup' measurment or....?  Just says 1/2 - 3/4 ??  thankyou tmrc_emoticons.)
