Hockey Pokey Ice Cream

Ingredients

2 litre(s)

Icecream

  • 1 teaspoon vanilla essence
  • 800 grams Full Fat pouring Cream
  • 180 grams white sugar
  • 6 egg yolks

Hockey Pokey

  • 200 grams castor sugar
  • 0.16 litres golden syrup
  • 3 level teaspoons bicarb soda

Recipe's preparation

    Icecream
  1. Place all icecream ingredients into mixing bowl and cook 8 min/90℃/speed 2.

  2. Pour mixture up to 4cm high into shallow freezaable containers, and cover with lid or plastic wrap.

  3. Allow mixture to cool completely before placing in freezer for 10 hours.

  4. The Hockey Pokey
  5. Put the sugar and syrup into a saucepan and stir together to mix. You mustn't stir once the pan's on the heat, though.

  6. Place the pan on the heat and let the mixture first melt, then turn to goo and then to a bubbling mass the colour of maple syrup - this will take 3 minutes or so.

  7. Off the heat, whisk in the bicarbonate of soda and watch the syrup turn into a whooshing cloud of aerated pale gold. Turn this immediately onto a piece of reusable baking parchment or greased foil.

  8. Leave until set and then bash at it, so that it splinters into many glinting pieces.

  9. Mixing it together
  10. Place frozen mixture into refridgerator for 15 minutes then cut into cubes 4cm x 4cm x 4xcm with a long sharp knife.

  11. Place half the pieces into the mixing bowl and crush 20 sec/speed 6/

    Add half of the hockey pokey then mix 10 sec/speed 4, with aid of spatula. 

    Transfer into bowl

  12. Place remaining frozen cream pieces into mixing bowl and crush 20 sec/speed 6/

    Add reamining half of the hockey pokey then mix 10 sec/speed 4, with aid of spatula. 

  13. Transfer into the bowl with the first mix and serve immediately.

Tip

For a firm consistency refreeze the icecream for 15 minutes before serving.

If serving from frozen, allow to soften for 15 minutes in refridgerator before serving.

Drizzle with chocolate sauce to serve.
