Base

  • 150 grams almonds
  • 55 grams Butter
  • 1 tablespoon sweetner of choice

Lemond Curd

  • 3 egg yolks
  • 2 whole eggs
  • 80ml lemon juice
  • 1 tsp tapioca flour
  • 50 Ml cream

Cheese Filling

  • 500 grams cream cheese
  • 1/2 --- cup cream
  • 3 teaspoon gelatine
  • 80 mls lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. crumb the almonds, speed 8/10 seconds

    add butter and sweetner, combine speed 8/8 seconds

    press into lined cake tin, with romoveable bottom

    refridgerate.

    Lemon curd mix

    add egg yolks with 2 whole eggs to Closed lid, add sweetners and lemon juice, cook 3 minutes/100deg/speed 2.5/MC on, add tapioca flour, cook further 3 minutes add cream at the last 30 seconds. let cool slightly while you make filling

    Cream Cheese filling

    place gelatine, sweetners, water into jug, mix 3 minutes,100deg/speed 2.3/MC on

    add lemon juice, cream cheeseand cream mix 1 minute, speed 3/MC on, test your sweetners to bring it to your liking. the lemon isnt meant to be overpowering.

    Pour over nut base

    Using a spoon, place spoons of lemon mixture into the top of the cheesecake and swirl around, I used about half in the mix and half for topping when served.

    Refridgerate for a few hours before serving.

Tip

Sweetners are such a personal thing! I always use a combination of xylitol, natvia and splenda, I find less weird aftertaste and because of this, its hard to work out an amount, I add a couple of sachets of splender a tblspoon of xylitol and 1 of natvia and adjust with more splenda.

Leave out the tapioca if you can't have it. The sauce will just be runnier.
