Crust

  • 65 grams Shredded coconut
  • 220 grams Roasted Cashews
  • 40 grams Maple syrup
  • 1 1/2 level teaspoons Vanilla Paste
  • pinch salt

Filling

  • 220 grams roasted cashwes, soaked for one hour
  • 250 grams coconut oil, very soft,do not use cold oil
  • 90 grams coconut cream, the solid part from the top
  • 200 grams lemon juice, freshly squeezed
  • 150 grams Maple syrup
  • 15 grams lemon zest
  • 1 1/2 level teaspoons Vanilla Paste
  • pinch salt

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Crust instructions:
    Line an 8"x8" pan with a piece of baking paper.
    Place all crust ingredients into thermomix bowl and turbo 3 times, scrape dpwn sides with spatula then turbo 3 more times until mixtuire resembles bread crumbs. Place mixture into lined pan and place into the fridge while you prepare the filling.

    Filling instructions:
    Place all filling ingredients into the thermomix bowl and blend 30-60sec speed 5, put mixture onto the crust base. Refrigerate for about 4 hours or until firm. Cut into bars. enjoy!

Tip

If your impatient you can put it in the freezer for 30min.
Refrigerate bars in an airtight container for up to 3 days.
