Lemon Energy Balls

  • 175 grams medjool dates, pitted
  • 140 grams macadamia nuts
  • 75 grams pepitas
  • 75 grams sunflower seeds
  • 45 grams Coconut, shredded or dessicated
  • 2 tbsp chia seeds
  • 1 lemon, zest and juice
  • 1 tbsp coconut oil
  • .5 tsp vanilla extract

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Place dates, nuts, seeds, coconut and zest in bowl and blend for 20 seconds, speed 8
  2. scrape down and repeat if necessary
  3. Add lemon juice, coconut oil and vanilla. Blend for 20 seconds, speed 4 or until mixtues comes together nicely.
  4. Shape into balls or press into slice tray. Refrigerate or freeze then serve.
