Mango, coconut & banana ice cream

6 large mangoes chopped

  • 1 can organic coconut milk or cream, Whisk with for in a jug
  • 1 banana, Sliced to fit in base of pops

Recipe's preparation

  1. 1. Purée mangoes in Thermie

    2. Pour 1-2cm coconut milk in base of pops 

    3. Place 1 slice of banana into the coconut milk leaving room for the pop stick

    4. Top with mango mango purée 

    5. insert pop stick & freeze till ready to eat (approx 3hrs or overnight better)

Tip

1. If you don't like the milky taste try coconut water it it very refreshing 

2. If you like your ice cream sweeter try adding some honey in the fruit purée 

3. Mangoes are best used in this recipe IN SEASON

4. These can be made with almost any other fruit; TRY

- coconut milk & purée banana

- coconut milk & puree berries (with or without banana)

- just berries topped with purée banana

5. Spice them up with cinnamon, cloves, nutmeg, pumpkin pie spice 

6. Add some protein by soaking 2tbs of chia in the coconut milk 30mins before assembling- this will also create a jelly like texture to the top layer

7. This can be made into any shape & size use silicone moulds for easy removal OR glad wrap tins- TRY as an ice cream loaf top it with chopped up macadamias & drizzle with honey & fresh blueberries
