Mini Choc-Raspberry Tarts
- 1 package pre-made chocolate tart shells
Raspberry Coulis
- 250 g raspberries, (Can be frozen, thawed)
- 70 g raw sugar
- 15 g lemon juice
Chocolate Ganache
- 100 g milk chocolate, broken into smaller pieces
- 80 g cream
Garnish
- 24 Fresh Raspberries

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Place all ingredients into bowl
Mix 30 seconds, starting at speed 5 and slowly increasing to speed 9
Scrape sides of mixing bowl with spatula
Cook 5 minutes, 90 degrees, speed 2
Strain coulis through sieve to remove the raspberry seeds
Set aside and Wash bowl
Chocolate Ganache
Grate chocolate 10 seconds, speed 8
Scrape sides with spatula
Add cream
Cook 2 minutes, 50 degrees, speed 3
Assembly
Place a thin layer of raspberry coulis in the bottom of the tart shell just to cover the base
Pour chocolate ganache in over coulis until the tart shell is 3/4 full
Garnish with a fresh raspberry on the top
