Base
- 150 g rolled oats
- 200 g Cashews, soaked overnight and drained
- 100 g Desiccant Coconut
- 2 pinches sea salt
- 60 g coconut oil melted
- 1 teaspoon vanilla bean paste/extract
- 175 g medjool dates pitted, approx 12
Passionfruit icing
- 270 g light coconut cream
- 40 g cornflour
- 100 g icing sugar, (milled raw sugar)
- 60 g passionfruit pulp, (about 3 passionfruit)

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Grease and line a 20cm x 20cm brownie tray with baking paper and set aside.
2. Place rolled oats in mixing bowl and mill 30sec/speed 9.
3. Add cashews, desiccated coconut, sea salt in mixing bowl and mill 10 sec/speed 9, or until fine. Scrape down sides of bowl with spatula.
4. Add coconut oil, vanilla and dates and blend 30 sec/speed 9, scrape down sides of mixing bowl and blend 10 sec/speed 9.
5. Firmly press mixture into prepared tray with the back of a fork and place in the refrigerator. Thoroughly clean and dry mixing bowl.
6. For the icing, place coconut cream and cornflour in mixing bowl and heat 3 min 30 sec/95C/reverse/speed 4 or until thickened.
7. Add icing sugar and passionfruit pulp and mix 1 min/reverse/speed 4 until combined.
8. Remove tray from refrigerator and spoon over icing. Return to refrigerator for at least an hour, or until set.
9. Remove slice from tray and cut into 16 pieces. Store in a sealed container in the refrigerator for up to a week.

Very nice slice. I used potato flour instead of cornflour and it gave the icing a nice gooey/soft texture. It did take longer to set because of this and was best eaten after overnight refrigeration. Whole family likes it which always earns 5 stars.
