Orange Syrup

  • 2 --- oranges, juice
  • 1 lemon, juice
  • 135 gram raw sugar

Cake

  • 350 gram mashed pumpkin
  • 250 gram Butter
  • 2 orange, rhind grated
  • 1 lemon, rhind grated
  • 180 gram castor surgar
  • 3 eggs
  • 280 gram Self Raising Flour

Recipe's preparation

    Mashed pumpkin
  1. Cut pumpkin into cubes and place in TM bowl. Add 100 grams of water and cook for 10 min/Varoma/speed 1. Then puree at speed 9 till smooth.

  2. Cake
  3. Preheat oven to 160 C.

    Cream butter, rhid, sugar and eggs. 10 sec/speed 5.

    Add 140 grams of flour and 175 grams of mashed pumpkin. 4 sec/speed 5.

    Repeat step - add 140 grams of flour and 175 grams of mashed pumpkin. 4 sec/speed 5.

    Pour mixture into greased cake tin and bake for 45 mins or until a skewer comes out clean from the cake.

    Remove cake from oven and skewer holes in the cake where the syrup will be absorbed.

    Tip syrup over the cake slowly allowing time for it to sink in.

    Remove cake from tin.

    Serve with strawberries and double thick cream.

  5. Whilst cake is cooking...

    Add the juice of the two oranges and lemon to clean TM bowl. 

    Add sugar and cook for 5 mins/100/speed 2 until sugar is dissolved.

    Syrup will be poured over cake once it is finished cooking and is taken out of oven.

    The flavour of this cake is beautiful BUT I feel there is too much liquid to pour over the top. I have now got a gooey dessert more than a cake. I would make it again but don't think I would add the juice on the top.

    Delicious! Will be a regular in this house. I cut the sugar in the cake back to 100g and will probably do even less next time as the syrup is plenty sweet enough for us, but this cake is a winner!

    TINA!!!! O M G!!!! WOW!!!! I'm seriously lost for words, but i'll try and find some!

    Light, fluffy, moist, absolutely INCREDIBLE and one piece is just not enough!! WOW!! The flavour is divine!! The perfect balance!! (I might reduce the sugar a bit next time though as the syrup is so beautifull sweet tmrc_emoticons.-)

    My pumpkin didn't make up to 350gm once cooked but it didn't seem to matter at all. 

    THIS is going to be a favourite in my circle! Thank you tmrc_emoticons.-)

    This cake was absolutely delicious. My mother's group girls were very very impressed! I had super juicy oranges so had a lot of syrup left over. I can't wait to make it again and next time I think I'll try little cup cakes

    Can't stop at one piece.

    This cake is delicious. Very moist and soft. This is the 3rd time this week I have made it. Made it into cupcakes the first time and had syrup left over. 

    I found I had to cook more than 350g of raw pumpkin to get 350g cooked. (About 500g but depends on the pumpkin) T

    This is definitely a hit for young and old. From my 18mth grandson to my parents. 

    Haven't got to the stage of putting strawberries and cream with it yet. It is eaten before that.
