Ingredients

Purple Sweet Potato Balls

  • 180 grams purple sweet potato, skinless, thick slices
  • 1300 grams Drinking water
  • 150 grams cooked purple sweet potato
  • 350 grams white glutinous rice flour
  • 200 grams grated coconut
  • 1 teaspoon salt
  • 200 grams Javanese sugar, cut into 40 small pieces
  • 1800 grams Drinking water
  • 200 grams Purple water, from boiling the purple sweet potato

Recipe's preparation

  1. Pour 1300 grams drinking water into mixing bowl. Put on simmering basket and put thick slices of 180 grams purple sweet potato into it. Then put on Varoma Basket and the tray. Place non stick baking paper on the Varoma Tray and spread the 200 grams grated coconut, and sprinkle 1 tsp salt on top of them. Boil and steam 18 min / Varoma / sp 2
  2. Take out the Varoma basket and simmering basket with the help of your spatula. Keep 200 grams of the purple waterfor the next step. Empty the bowl but no need to wash it.
  3. Put the 150 grams cooked sweet potato back into the mixing bowl, add 350 grams White glutinuous rice flour,200 grams purple water. Knead the dough 4 min
  4. Rinse the bowl. Shape and fill the dough with 200 grams Javanese sugar
  5. In the clean bowl, pour 1800 grams drinking water. Put on simmering basket and place some of the balls on the bottom of the simmering basket. Close the mixing bowl lid. Boil for 10 min / 100 C / sp 3 until the balls are floating. Then coat the balls with the grated coconut
