Raspberry Bliss Balls

Ingredients

Balls

  • 75 grams raw cashews
  • 75 grams Dedicated coconut
  • 70 grams frozen raspberries
  • 2 tablespoons Maple syrup
  • 1 teaspoon lemon zest

Extra coconut for rolling

Recipe's preparation

  1. Soak cashews in water for 4 hrs

  2. Drain cashews

  3. Add all ingredients to bowl 

  4. Mix 5sec/speed 7 MC on

  5. Scrape down sides of bowl

  6. Mix 5 sec/speed 7 MC on

  7. Roll mixture into small bite sized balls

  8. Roll in extra coconut

  9. Store in fridge for up to 2 weeks

    Thanks for the great recipe - they are so quick and easy to whip up for a lovely looking take a plate, or quick snack! The colour is amazing.

    Mine were slightly too wet, I think I had a fair bit of ice with the frozen raspberries, so might do a quick rinse of them next time. They are not as firm as I would like as a result, even though I added a little almond meal to compensate.

    I also wondered about adding some freeze dried raspberries for some added raspberry flavour next time. Loved the lemon zest, and they make a nice change from the lemon bliss balls.
