- 480 grams Waffles (approx 14 ), Store bought or homemade
- 300 grams raspberries, Fresh or frozen
- 350 grams Good quality white chocolate
- 70 grams caster sugar
- 480 grams thickened cream
- 3 eggs
- 3-4 pieces lemon rind
- 1 teaspoon vanilla extract
- 1 tablespoon plain flour

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
1. Preheat oven to 170c.
2. Add lemon rind pieces to bowl and turbo 2secs x2. Scrape bowl and repeat.
3. Scrape bowl and add caster sugar, plain flour, eggs, cream and vanilla extract. Mix for 10sec / speed 4.
4. Grease a large baking dish and scatter half the waffle pieces, half the raspberries and half the white chocolate. Repeat with remaining ingredients.
5. Pour over pudding mixture and bake for 40mins or until golden and pudding is set.
6. Serve immediately.

Swap the raspberries and white chocolate for strawberries and dark chocolate.
