Raw Mini Chocolate Cheesecakes

Ingredients

Crust

  • 50 grams pecans
  • 80 grams Hazlenuts
  • 5 Medjool Dates, de-seeded
  • 2 tablespoons Shredded coconut
  • 1 teaspoon Vanilla Paste
  • pinch Himalayan Rock Salt
  • pinch mixed spice
  • 1 tablespoon Raw Cacao

Filling

  • 340 grams Raw Cashew Nuts, (pre-soak 2 hours)
  • 125 grams water
  • 140 grams Maple Syryp
  • pinch Himalayan Rock Salt
  • 1 tablespoon Vanilla Paste
  • 120 grams coconut oil, (warmed until liquid)
  • 2 tablespoons Raw Cacao

Garnish

  • eg cacao nibs
  • eg Shredded coconut
  • eg berries
  • eg Goji Berries

Recipe's preparation

    Raw Mini Chocolate Cheesecakes
  1. Pre-Soak Cashews in water for approx 2 hours.  Rinse and drain well and set aside for filling. 


    CRUST

    Place all crust ingredients except raw cacao in Thermomix and combine  15 sec/SP8 or until mixture resembles breadcrumbs.  Add raw cacao and Closed lidTurbo 2-4 times until combined through.  Mixture should be sticky at this stage.  If not, add a few drops of water (very TINY amount) and re-blend SP8 for a few seconds.  Press prepared mixture into silicone mini muffin tins and place in the freezer while you make the filling. 

     

    FILLING

    Place all filling ingredients except coconut oil and raw cacao in Thermomix bowl and combine 20sec/SP8, until creamy.   Scrape down sides of bowl and add coconut oil and raw cacao. 

     

    Pour into prepared crusts and freeze for 3 hours. 

     

    Remove from freezer and pop out of silicone moulds.  Allow to soften slightly for about 15 minutes and garnish with your choice of decoration (cacao nibs, shredded coconut, cacao powder, fresh berries, goji berries)

     

    Serve and enjoy!

Tip

Soaking your cashews isn't 100% necessary, but there are health benefits to doing so.  You will also achieve a creamier texture.  If you forget to soak them for 2 hours before making recipe, you could just soak them prior to making your crust. 

Once taken out of the freezer, these lovely little bites should be eaten ASAP, as they will sofren and lose their shape quite quickly. 

 

You may have leftover filling.  It is delicious on its own as a frozen chocalate mousse.  I just pour the leftovers into silicone moulds and freeze until required.
