Salt Flakes Caramel Fudge

  • 1 can sweetened condensed milk, (not skim) i make my own now. See tips
  • 75g golden syrup
  • 125g Butter
  • 160g brown sugar
  • 200g white chocolate, (nestle drops work for me)

      Recipe is created for
      TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Chop white chocolate 5 seconds /  Speed 9.

Remove chocolate and set aside, no need to clean bowl.

Now place all remaining ingredients into the TM, cook for 8mins / 100C / speed 3. With the MC REMOVED.

Scrape the sides and bottom of bowl with spatula, if necessary.

Cook for a further 20mins / Varoma Temp / Speed 3, (NO MC to ensure the condensation does not drip into the fudge).

Add chopped chocolate 10 - 15 secs / Speed 3-4, ensure choc has melted.  Repeat if necessary.

Pour into lined square 20 x 20cm tin or slice tin.

Place in fridge to set for about an hour or so before cutting.

Rock Salt can be used in place of Sea Salt Flakes however they may not dissolve completely. You can add more or less salt depending on your own individual taste.

I recommend leaving the fudge to set for a few hours or overnight. I cut the first batch after an hour; it cut rough. It cut beautifully smooth when I left it longer than just the one hour.

I tried your recipe and they ended up not setting in my fridge overnight. So I ended up cooking it again at veroma temperaure for another 20 minutes then added another 80 grams of blitzed chocolate at the end and doing this worked and I was pleased with the outcome then.

  • A friend of mine recommend

    Submitted by soulful on 25. July 2016 - 11:30.

A friend of mine recommend your recipe.  I made it for my family.  I don't eat sugar, so I can't comment on the flavour but I can tell you it was so easy to make.  The only issue I had was the ending of the instructions seem to be missing. I waited for it to call down on the bench top for about one hour, before I sliced ithe fudge and poped it into the fridge to completely set.  However it was soft enough to slice the fudge after it's been in the fridge overnight.  Thank you for sharing your recipes.
