Ingredients

BASE

  • 80 g Nice biscuits
  • 80 g granita biscuits
  • 80 g Butter
  • 1/4 teaspoon cinnamon

FILLING

  • 250 g full fat cream cheese
  • 150 g condensed milk
  • 2 tbsp lemon juice
  • 150 g whipping cream
  • 1 teaspoon Vanilla extract/essence

TOPPING

  • 250 g strawberries, 1 punnet
  • 4 tablespoons Strawberry Jam
  • 1 tablespoon Cointreau, optional
  • 3 teaspoons lemon juice
  • 1-2 teaspoons Gelatine powder

Recipe's preparation

    BASE
  1. Place biscuits into jug and Crush 5-6 seconds/ Speed 7, set aside

    Melt butter 2 minutes/ 60 degrees/ Speed 4, scraping down sides of jug after 1 minute

    Add crushed biscuits and cinnamon, combine 7 seconds/ Speed 5

    Press mixture firmly into a lightly greased 20cm springform pan

    Refrigerate 

     

  2. FILLING
  3. Insert Butterfly into jug, whip cream 1 minute/ Speed 4, set aside

    Do not wash the jug

    Place all other filling ingredients into jug and mix 15 seconds/ Speed 5

    Pour onto prepared base. refrigerate until firm

  4. TOPPING
  5. Hull and halve washed strawberries, arrange cut side down onto filling

    Place all other filling ingredients into jug ensuring gelatine is not sprinkled onto blades

    Cook 4 and 1/2 minutes/60 degrees/ Speed 1

    Pour into a bowl, cool a little before spooning mixture over top of strawberries

    Refrigerate for 2 hours before serving

     

Tip

This cheesecake is super easy to make and is totally delicious!

Recipe is suitable for both TM5 and TM31

Preparation time includes time for chilling

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities.
