Tanya's Banana Caramel Swirls

Ingredients

Banana Swirls

  • 75 g Butter, cold, cubed
  • 220 g plain flour
  • 2 1/2 tsp baking powder
  • 85 g Milk
  • 200 g bananas, approx 2 medium
  • 1/2 tsp cinnamon

Caramel Sauce

  • 100 g golden syrup
  • 150 g brown sugar
  • 40 g Butter, cubed
  • 225 g water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Banana Swirls
  1. Preheat oven to 180°C

    Weigh in flour, baking powder and butter
    7 sec / spd 7
  2. Weigh in milk
    5 sec / spd 5
    45 sec / dough mode
  3. Roll out dough into a rectangle on a lightly floured surface
  4. Weigh in bananas
    5 sec / spd 5

    (scrape down sides and mix again if not mashed enough)

    Spread mashed banana evenly over the dough and sprinkle with cinnamon.

    Roll up and slice into approx 8 slices

    Arrange cut side down in a 20 x 20cm baking dish lightly sprayed with cooking spray.

    Wash bowl ready for making caramel sauce.

    Carefully pour half to two thirds of the sauce over the swirls.
    Bake in oven for 20-30 mins until swirls are golden and cooked through.

    Keep remaining caramel sauce warm in a thermo jug and use for drizzling over the top of the swirls when serving.

    Serve with ice cream and/or cream.
