Thai Mango Sorbet

Ingredients

1 litre(s)

Sugar Syrup

  • 150 grams coconut palm sugar
  • 120 grams filtered water

Fruit

  • 3 Ripe Mangoes
  • 1 lime, Zest and juice

Recipe's preparation

    Make sugar syrup
  1. Weigh in ingredients and set to 15 minutes / 100 / speed 3.  MC removed.  Reduce liquid by approx a third.  Poor into a container and chill in the fridge until cool.

  2. Blend Sorbet
  3. Remove flesh from three mangoes, zest one lime and juice, add these ingredients and sugar syrup to bowl and blend speed 9 / 20 seconds.  

    Freeze on a shallow tray, blend twice during freezing process in Thermomix till frozen and store in freezer till served.  Otherwise pour mixture into ice-cream maker and churn till frozen.
