Base

  • 90 grams Butter
  • 200 grams Chocolate Ripple Biscuits, 1 pkt

Filling

  • 110 grams caster sugar
  • 2 package Tim Tams
  • 500 grams cream cheese
  • 130 grams thickened cream
  • 130 grams Baileys Irish Cream
  • 1 level teaspoon Vanilla Essence or Paste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. 1.Lightly grease the sides of 23cm Springform Tin and line base with baking paper

    2. Melt butter in TM Bowl 3 mins/50C/speed 4.

    3. Add Biscuits and blend 10 secs/speed 8

    4. Place biscuits crumbs in tin, pressing down hard with back of spoon. Place in fridge until required
  2. Filling
  3. 1. Place one of the packets of Tim Tams into TM Bowl. Crush into large chunks, 4 secs/speed 4. Empty into a bowl for later.

    2. Place the other packet of Tim Tams in TM Bowl. Blend 5 secs/speed 7. Then melt for 4 mins/40C/speed 2.

    3. Add caster sugar to TM Bowl with the melted biscuits, 5secs/speed 9.

    4. Add all other ingredients except for the reserved Tim Tams. 20secs/speed 5. Scrap down filling with scapula then 20 secs/speed 5.

    5. Add half of reserved Tim Tams, mix reverse 3secs/speed 7

    7. Pour Filling onto the biscuit base then top with the rest of reserved Tim Tams.

    8. Place in fridge to set.

    Perfect cheesecake! Super easy and very yummy 😋 have made twice now, second time I doubled the base ingredients and run it up the sides. Worked amazing!
