Too Easy Mango Chia Pudding

Ingredients

2 portion(s)

  • 400 grams Flesh of fresh mango, - approximately one large
  • 4 heaped tablespoons chia seeds

Recipe's preparation

    Mango Pudding
  1.  Cut flesh from mango and discard skin. Place in bowl.

    2.Blend on speed 8 for 15 seconds, then increase to speed 10 for 5 seconds. 

    3. Add Chia seeds, mixing on speed 4 for 5 seconds. Pour into bowls.

    4.Refridgerate for at least 15 minutes, until seeds have swelled and the pudding appears set.

Tip

White or black Chia seeds may be used.

Puddings can be divided into individual dishes if desired.

    I used a 400g tin of mango slices in natural juice and also 100g leftover evaporated milk I had left from another recipe, and refrigerated overnight.  Worked great.  Thanks

    Haven't tried as it is so quick and portions easily adjusted that I have been making on the fly. I ground some almonds this morning before adding the mango and chia and baby and I went halves for breakfast.
