For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Grease a 1 litre pudding basin and place the golden syrup into the base. Set aside.
  2. Add all remaining ingredients into the mixing bowl.
  3. Mix for 30s / Sp5. Scrape down the mixing bowl and mix for a further 10s / Sp5.
  4. Pour prepared cake batter into the pudding basin on top of the golden syrup. Smooth out the top cover it with a greased circle of baking paper, folded with a pleat in the middle to allow for the pudding to expand. Cover with the lid of the pudding basin. If your basin doesn't have a lid, cover again with a circle of foil, also with a folded pleat in the middle and secure with string.
  5. Place prepared pudding basin in the Varoma dish and secure the Varoma lid.
  6. Add 1500g of water to the mixing bowl, place the Varoma into position and steam for 90 mins / Varoma / Sp2.
  7. Carefully remove the Varoma and check the water level in the mixing bowl; add another 500g if required. Replace Varoma and steam for a further 60 mins / Varoma / Sp2.
  8. The pudding is cooked when a skewer inserted comes out clean. Carefully turn out onto a serving plate while it's still warm.

Serve warm with your choice of cream, ice cream or custard.

    Enjoy!

Tip

I used the rose gold pudding basin from TheMix Shop to create this recipe. The instructions for how to cover if you don't have a basin with a lid were taken from other Cookidoo steamed pudding recipes.
The English way that I know of making this dessert would use Demerara Sugar and Black Treacle. I was happy with the result using brown sugar and molasses.
