Waffle Batter

  • 320 g plain flour
  • 25 g Baking Powder, pre-made
  • pinch salt
  • 3 Eggs, separated
  • 190 g Milk
  • 130 g water
  • 140 g Butter, cubed

Recipe's preparation

    Waffle Batter
  1. Pre-heat waffle iron.

    Whisk egg whites and salt together on speed 3 with butterfly for 5 minutes.

  2. Put aside. Rinse bowl and dry thoroughly. Melt butter on 70 degrees for 4 minutes on speed 2. Add flour, baking powder, egg yolks, milk and water. Insert butterfly and whisk on speed 4 for 8 seconds. 

  3. Return egg whites to TM31 bowl. With butterfly, lightly fold in egg white on speed 2 for 10 seconds.

  4. Pour batter onto hot waffle iron until about 3/4 of the patterned area is covered.

  5. Close lid and cook until golden brown in appearance & crispy to the touch.

Variations to Recipe

Use non-dairy milk and gluten-free flour if preferred; GfG Gluten substitute produced by Organ available at major supermarkets and Health Food Shops helps to achieve the texture of gluten flour.

Savoury waffles, add pre-cooked bacon bits and finely chopped sauteed onion to batter. Serve with fresh or fried tomato and sauteed mushrooms.

Sweet waffles 1. Add 1/3 cup grated apple, 1/8 t cinnamon and 1 T sugar to batter 2. Serve with sliced banana, strawberries, mango, passionfruit and/or freshly squeezed lemon juice on top with home-made yoghurt on the side.
