Barramundi with Mash Potato and Lemon Butter Sauce

Ingredients

  • 370 grams barramundi fillets, seasoned with salt and pepper
  • lemon juice, to taste
  • 800 grams potatoes, peeled and roughly chopped
  • 190 grams full cream milk
  • sea salt, to taste
  • 60 grams Butter, 2x 30g portions
  • 20 grams Parmesan cheese, grated
  • 10 grams fresh parsley leaves
  • 2 garlic cloves
  • 250 grams thickened cream
  • 20 grams lemon juice
  • 3/4 teaspoon salt
  • pepper, to taste
  • 1 teaspoon cornflour
  • 60-100 grams Baby Spinach Leaves

Recipe's preparation

  1. Line the Varoma tray with damp baking paper ensuring the side vents are unobstructed. Place salt and pepper seasoned barramundi fillets onto the baking paper and drizzle with lemon juice. Cover with the Varoma lid and set aside.

  2. Add potatoes, milk and salt to taste into the Thermomix bowl. Close the lid and place the Varoma bowl with the tray of fish on top and cook 25 minutes / 100oC / speed 2.

  3. Take off the Varoma bowl and set aside. Do not remove the fish from the Varoma tray; leave it covered until ready to use.

  4. Insert butterfly. Add 30g butter and Parmesan to the mash 30 sec / speed 4. Empty mash into your ThermoServer and set aside. Wash and dry the bowl to start making the sauce.

  5. Add parsley leaves and garlic cloves and chop 3 sec / speed 7.

  6. Add 30g butter and melt 40 sec / 30oC / speed 4.

  7. Add thickened cream, lemon juice, salt, pepper and cornflour and cook MC off, 10 mins / 100oC / speed 1.

  8. While the sauce is cooking, divide the spinach amongst the plates. Then divide the mash and portions of fish on each plate.

  9. When it has finished cooking, pour the lemon butter sauce on top of each fish. Serve immediately.

Tip

Depending on the thickness of your barramundi, you may need to steam it for a little bit longer. Also depending on how much your guests like it, there may be some potato mash left over. The sauce is also on the runnier side so add more cornflour to thicken your sauce to the consistency you desire. Also feel free to swap the spinach leaves to a salad of your choice.

    This was a fabulous meal! My husband thought it was restaurant quality. Even though the kids groaned when I said we were having fish for dinner, they ate it all up without complaints and one even asked for secondstmrc_emoticons.) The only change was that I only had one potato and one sweet potato so I topped up with carrots - which was actually quite nice. And, I added green beans on the side as I didn't have any spinach. Beautiful! Looking forward to making again.

    I was looking for a lemon butter sauce for fish when I came across this recipe. Very easy and tasted really nice with pan fried salmon fillets. I left out the garlic and only added 150g cream.

    Really great. I had to boil the kettle and refill the bowl after I took the potato out to keep cooking my fish as it was very thick. But the meal was loved by everyone. Instead of spinach I served with cherry tomatoes, fresh steamed asparagus and the mash. Yum!

    Made this tonight - YUM! I used basa fillets, and modified the sauce by using 130 g of light Greek yoghurt instead of thickened cream, 5 cloves of garlic, 5 g parsley, no corn flour, half a lemon, the same amount of butter/salt/pepper, and cooking for only 4 minutes.

    Was delicious and devoured by my family. Used queen snapper and also steamed broccoli and cherry truss tomatoes in the bottom of the varoma to increase our vege. Will definitely be add to the regular dinner list.

    This was yummy. It would have been good if the recipe told me to grate my parmesan and set it aside before putting potatoes in the bowl. The sauce was great, worked perfectly for me. The mash was a tad overworked so I would reduce mashing time next time. Overall very nice.

    Not sure what happened there nicoledaniel  tmrc_emoticons.~ If you find you have a really thick fish it may take a little longer to cook so additional steaming time may be needed. What may also be but hopefully unlikely, is that your Thermomix may have heating issues; speak to your consultant if this is the case. It really is delicious as others have commented and experienced; I hope you get to try it again  tmrc_emoticons.)

    Beautiful, cooked this for the family, everyone loved it. I cooked the fish and the sauce at the same time and made a salad to go with it And it was fine. I cooked it for 15 minutes then, made the sauce and put the varoma with fish back on while the sauce was cooking. The lemon butter sauce was amazing, will definitely be making it again.     Very tasty and a big hit with all the family... everyone wanted seconds, so I will be making this one again!  Didn't have parsley, but still amazing without it. I also had over twice the amount of fish, but spread it out over the Varoma dish and tray. Great recipe, thanks!

    not to sure whats happening but my fish has not cooked in the 25 mins. is it correct to cook it only on 100 degrees when using the veroma? i always thought u used the veroma temp for veroma? hope it tastes yummy ive been looking forward to it

    This was incredibly tasty. Instead of spinach I included steamed silverbeet (in the tray under the fish), and used latchet (no barra available). Cooked for a shorter time then kept them warm back on top while the sauce was cooking. Thanks for posting.

    My fish was great but the sauce split and I couldn't fix it, very disappointed as this was the bit I was trying to really get right tmrc_emoticons.( I can't find a good lemon sauce for fish and thought this might be the one. Also too much parsley in it, only put the 10g in but the split sauce turned green tmrc_emoticons.(

    My family really enjoyed this. Subbed out lime for lemon juice and added capers to the sauce. I also added in lightweight greens to the varoma dish to steam at same time as fish.  Timing worked well for everything. Thankfully I have two thermomixes so could make the sauce at same time as the mash/fish  tmrc_emoticons.)

    Thank you for sharing this recipe. My Dad wanted barramundi for dinner and not having cooked fish very successfully I was pretty nervous but this was delicious. It got the thumbs up from Dad and I! I can't leave a recipe alone though, I had two pieces of barra which was over 700g so I just took the potato out when cooked, popped some water in and steamed for another 15mins to finish the fish off. I also added a smattering of capers to the sauce 2 mins before it was finished. Yummy. A very forgiving recipe and will be a favorite from now on!

    My husband hates fish and after eating this dish, he still hates fish. The fish itself was juicy and melted in the mouth, but the sauce came out very acidic. It also split. Also not sure about the spinach. Maybe better with steamed greens.
