Beef Ragu
- 30 grams olive oil
- 700 grams Chuck Steak
- 2 carrots, Thickly Sliced
- 3 cloves garlic
- 2 stalks Celery, Thickly Sliced
- 3 sprigs Thyme, Fresh
- 2 sprigs Rosmary, Fresh
- 2 --- bay leaves, Dried
- 1 Cup of Dry Red Wine
- 2 tablespoons tomato paste
- 1 tablespoon vege stock
- 1 400gm tin diced tomatoes
- 1/4 teaspoon Crushed Chilli Flakes
- 2 onions, peeled and quarterd

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Peel and cut 2 onions into halves and then thin wedges
Peel 3 cloves of garlic, chop 5 seconds, speed 5
Add oil, onions, celery, carrots, cook 3 minutes at 100 degrees reverse, soft spoon
Add thyme, rosemary, bay leaves, cup of red wine and cook 2 minutes 100 degrees, reverse soft spoon, MC off
Scrape down bowl
Add beef, stock, tomatoe paste, tin of tomatoes and cook 60 minutes at 100 degrees, reverse soft spoon, MC off, Basket on top
Stir with spatula through the hole in the lid occasionally
Check softness of meat and add 10-15 minutes as needed until the meat is tender

Tip
I use gravy beef for a richer flavour but it needs a longer cooking time, perhaps an extra 20 minutes.
Serve with rice and fresh greens and sprinkle the chille over the top

Its good, its really good. Easy and so delicious gave it an extra 20 minutes and blitzed for a few seconds to shred the meat. Served it over pasta. Try it you want regret it

Delicious - I grated the carrot so that it was 'hidden' and therefore would be eaten, plus it helped thicken the sauce. The leftover sauce is going to used to make a quick pasta sauce by adding pieces of leftover BBQ sausages and fresh mushroom and serving over 'bow-ties'. Thanks for sharing this recipe.

Absolutely beautiful meal. Hubby licked his bowl clean!! Penty leftover for a couple of work lunches. I stirred frozen peas through at the end while I mashed my potatoes & they were cooke by the time I served up. Flavours were gorgeous!!!

Made a half batch, cooked for the same amount of time. Replaced the tinof tomatoes (1/2) with the equivalent quantity of home grown cherry tomatoes. Delicious.
I always use oyster blade
I always use oyster blade when making stews and it's a great cut for it! Cooked it 20 minutes longer as suggested by most and thickened with some corn flour as there was a lot of sauce. It was ah-may-zing and even my no. 2 who is not a fan of beef asked for more! This will definitely be my go-to beef ragu recipe from now. Oh, I also managed to put in almost 1kg of beef just because I had them in my freezer and there was no spillage whatsoever. Thanks for sharing your recipe!

I made this recipe last night
I made this recipe last night & received a big tick of approval from husband. I cooked it 20 mins extra without the basket, so no need for thickening. Will become a regular dish for us!

Would be really yummy served on a bed of mashed sweet potato. I served mine with penne pasta, the sauce was probably a bit runny, any ideas how I could thicken the sauce into a lovely thick gravy?
