Beef Tinaktak

  • 110 g onion, yellow
  • 3 cloves garlic, large cloves
  • 1 tbsp Coconut or olive oil
  • 15 g fresh ginger, peeled and sliced
  • 900 g ground beef or ground turkey
  • 1,5 tsp salt
  • 1 tsp ground black pepper
  • 400 g coconut milk
  • 400 g canned tomatoes, cherry or crushed tomatoes
  • 600 g green beans
  • 8 g coriander, fresh
  • 1 piece chili pepper, fresh, optional
  • 1 piece lemon, optional

Recipe's preparation

  1. Place garlic, ginger and onions in mixing bowl, blend 5 sec/speed 6. Scrape down sides of mixing bowl with spatula.
  2. Add oil and cook 2 min at 100°C, speed 1
  3. Add minced meat, salt and pepper. Stir with spatula to break up and loosen meat. Place simmering basket instead of measuring cup onto mixing bowl lid and cook 5 min/120°C/Counter-clockwise operation/speed 1.Scrape bottom and sides of mixing bowl with spatula. Repeat this step if necessary until meat is cooked through.
  4. Add coconut milk and tomatoes, simmer 5 min/100°C/Counter-clockwise operation/speed 1 to let the sauce thicken.
  5. Trim the green beans into bite-sized pieces and add them to the stew. simmer 10 min/100°C/Counter-clockwise operation/speed 1. The beans should be al dente. Taste and rectify seasoning if needed.
  6. Serve into portion bowls, if using, add fresh coriander leaves and a wedge of lemon.

When using canned tomatoes, it looks nothing like the picture shown but there is way more of the delicious sauce Smile. Really nice with fresh cherry tomatoes as well.

    Well this recipe kept coming up but i was not sure of the name so incase someone else is curious - What is the meaning of Tinaktak?
    Tinaktak is a Chamoru dish from the Marianas, comprising finely chopped pieces of meat with vegetables and cooked in coconut milk. The name comes from the Chamoru word taktak, an onomatopoeia from the sound of meat being chopped/tenderized. Traditionally, it is from chopped meat, but oftentimes ground meat is used.
