Cel's Delicious Honey Chicken

Ingredients

6 person(s)

  • 1000 g chicken breast, roughly diced (not too big)
  • 500-1000 g shortening, (frying oil - only if frying in pan. Not required if using air fryer, however, **Please Note** Cooking the chicken in the air fryer can be very messy. I highly recommend, for best air fryer results, to first fry the chicken pieces until the batter is firm/no longer runny, then place into the air fryer. )

Batter for Chicken Pieces

  • 70 g plain flour
  • 25 g cornflour
  • 5 g (1/2 tsp) Baking powder
  • 100 g water
  • 20 g oil
  • 1 egg white

Honey Sesame Sauce

  • 2-3 garlic cloves
  • 10 g sesame oil
  • 100 g Beatworth's 'Bush Honey', (This honey isn't as sweet as most which is why I chose it for this recipe)
  • 5 g Apple Cidar Vinegar
  • 5 g tomato sauce
  • 10 g cornflour
  • 100 g water
  • 2-3 pinches salt, (I use flaked himalayan or flaked sea salt)
  • 10-20 g sesame seeds, (to your liking) for garnishing

Rice

  • 1 Recipe of Egg Fried Rice, (on the UK Cookidoo, part of the Chinese collection)

Recipe's preparation

    IF FRYING IN PAN:
  1. Place the oil in a deep saucepan / deep fryer getting the oil ready for frying
  2. Add all batter ingredients into mixing bowl & mix 10sec/sp4. Scrape down the bowl then mix again 10sec/sp4.
  3. Add the 1000g of diced chicken breat into the mixing bowl with the batter then coat 30sec/Counter-clockwise operation/Gentle stir setting. Pour chicken & batter mix into a large bowl & use spatula to ensure all chicken pieces are covered.
    Place bowl next to stovetop where oil is heating up / next to deep fryer. Clean & dry mixing bowl.
  4. Prepare plate OR Thermoserver with papertowel and place close by where you will fry the chicken so you can easily transfer pieces once they are fried.

    IN FRYING PAN:

    Once oil has heated to frying temperture, drop in chicken pieces one at time. I use quiet a large saucepan & fry 15-20 pieces at time. You don't want to crowd the chicken pieces too much so you may have to do 5 or 6 batches of frying. Fry until chicken pieces are golden (between 5-10 mins depending on your oil temperature)

    IN AIR FRYER:

    Air fry in batches and do not crowd. I do mine at 180° for around 12-15 mins (this may vary depending on the size of your chicken pieces) shaking at least twice during that time - adjust cooking time to achieve your preferred golden to crispy ratio. Before removing and continuing with next batch, pull out the biggest piece and cut open to ensure is cooked through.

    THEN

    Place on paper towel in/on plate/thermoserver.
    Continue frying in batches until all the chicken is fried & transfered to plate/thermomserver. Once all pieces are fried, place lid on thermoserver - If you don't have a thermoserver, place in the oven on low heat to keep warm - while you make the honey sesame sauce.
  5. Closed lidMince garlic in the mixing bowl 3sec/sp7. Scrape down then add sesame oil & saute 2min/120degrees/sp2.
    (For TM31 users use your varoma temp at this step)
  6. Add remainder of honey sesame sauce ingredients and mix 30sec/sp3 then cook 16mins/120degrees/sp3 (varoma temp for TM31) mc off & steaming basket placed on top of the mixing bowl lid instead (of mc)
  7. To coat chicken - Counter-clockwise operation/Gentle stir setting & drop fried chicken pieces in through the lid then add in sesame seeds through the lid and continue mixing until all pieces are coated in the sauce.
    Transfer honey chicken back into thermoserver/onto plate - if you wish you can sprinkle more sesame seeds over the chicken - then put lid back on thermoserver or back into warm oven until ready to serve.

Tip

Once you have friend the first batch, cut open a piece to ensure chicken is cooked.

If you have a second thermomix, you can make the friend rice while you are frying the chicken.

Unless the step involves adding ingrediengt through the lid OR otherwise stated - mc is used.

    Again, needs to be done in batches and not crowded but can definitely be air fried.     I thought I'd cooked this recipe before and loved it. Made this tonight and the chicken was nice and crispy but the sauce was like glue ☹️. I added a little water to thin it and had to keep checking to make sure the honey was being incorporated properly. Sauce was almost tasteless. Very disappointed.

    I am sure it would work fine as oven baked or air fried though I have never tried either however, within the next month I will trial both and update recipe notes. I am thinking though that air frying will most likely be the quickest of the two with the best results... We shall see 😉☺️

    Yummo! I cheated and did chicken nuggets in my air fryer and skipped to step 5. I used 100g sesame seeds but I'd probably go 80-90g next time. It was delicious and I'll definitely cook this again.

    Next time (Yes, there will definatley be a next time!!!) I will double the sauce recipe.
    I only used about 80g sesame seed to garnish and that was plenty.
    The frying of the chicken was a bit time consuming but so worth it.

    It was tasty although I was disappointed as I wanted it really battery like the chineses reastaurant although there was nowhere near the same batter effect, even though the chicken was heavily coated???? I would not use sesame oil in the sauce either, it didn't taste very nice.

    This was amazing! I substituted GF flours and baking powder to make it GF and I doubled the quantity of the sauce. I also steamed some sliced carrots and added them in when mixing the sauce into the chicken. Will defintely make it again Tongue
