Charlie's Beef Fillet Marinated and Steamed

Marinade

  • 3 cloves garlic peeled
  • 4 cm ginger knob, Sliced
  • 120 grams Japanese Soy Sauce
  • 60 grams Sherry - medium dry
  • 10 grams brown sugar
  • 25 grams olive oil

Beef Fillet

  • 1000 gram Beef fillet, whole trimmed

Brown Rice

  • 70 grams Brown Rice per person

Recipe's preparation

    Marinade Beef Fillet for 4 hours
  1. Rub Beef fillet with oil then pour over marinade and cover dish and place in fridge for 4 hours

  2. Soak Brown Rice in water
  3. Weigh 70grams per person and soak brown rice in water while beef fillet is marinading.

  4. Steaming the Beef Fillets
  5. Put TM basket into TM bowl and put drained soaked brown rice. Add 1.1kg water into TM bowl.

    Place marinaded fillet into the base of the Varoma and pour over marinating liquid.

    Cook beef fillet and rice

    30 minutes / Varoma / speed 3

    Check Beef fillet for doneness after 25 minutes... and if necessary steam another 10 minutes... .

    Rest Beef fillet for 20 minutes in Thermo Server before slicing..

Tip

The time taken to steam the beef is dependant on the size and thickness of the beef fillet. Sometimes it takes the full 30 minutes.
