Chicken Involtini with Tomato Sauce, Creamy Polenta and Garlic Beans (Meal)

Ingredients

4 portion(s)

Chicken

  • 2 chicken breasts
  • 4 slices prosciutto

Chicken Stuffing

  • 10 grams Basil leaves, (Small Handful)
  • 40 grams spinach, Frozen is fine
  • 3 cloves garlic
  • 100 grams Mozzarella Cheese
  • 15 grams Butter
  • 1 teaspoon TM vege stock concentrate
  • Pinch Pepper

Tomato Sauce

  • 1 Onion, Peeled & quartered
  • 1 clove garlic, peeled
  • 1 Carrot, Washed and quartered
  • 10 grams Basil Leaves (small handful)
  • 10 grams olive oil
  • 250 grams Tomatoes, Washed and quartered
  • 40 grams water
  • 40 grams red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon Beef Stock Paste/Powder
  • 1 tablespoon balsamic vinegar

Creamy Polenta

  • 500 grams Milk
  • 650 grams water
  • 1 tablespoon olive oil
  • 1 teaspoon Vege Stock Concentrate
  • 220 grams polenta
  • 50 grams cream
  • 40 grams Parmesan cheese

Crispy Prosciutto wrapped Asparagus Spears (Optional)

  • 8 asparagus spears
  • 4 slices prosciutto

Garlic Beans

  • 200 grams green beans
  • 4 cloves garlic
  • 3 tablespoons olive oil

Recipe's preparation

    Preparation
  1. 1. Grate Parmesan Cheese for Polenta. 7 sec/Spd 7. Put aside.

    2. Line top varoma tray with baking paper (for beans).

    3. Grate garlic for Beans. Put garlic onto baking paper.

    4. Do not wash bowl, start sauce.

  3. Put onion, garlic & carrot into TM bowl. Chop 5 sec/Spd 5.

    Add oil. Cook 5 mins/100/Spd 2.

    Add remaining sauce ingredients. Blitz 10 sec/Spd 6.

    Cook 9 min/90/Spd 2 with MC off. 

    Set aside in Thermoserver.

    Note: While the sauce is cooking, prepare the chicken.

     

  4. Chicken Stuffing & Preparation
  5. butterfly the breast in half, and using a mallet, slighly flatten out.

    Place 2 slices of prosciutto on Cling film or baking paper, and lay flattened chicken breast on top. Lay spinach leaves over the top of each breast to cover. Repeat for other breast.

    Put all remaining stuffing ingredients in TM bowl.

    Blend 5 secs/spd 6. Scrape sides of bowl and repeat.

    Spread 1/2 stuffing mixture on top of each breast.

    Using the cling film or baking paper to assist you, wrap each chicken breast into a tigh roll, twisting at the ends. 

    Place in varoma.

     

     

     

  6. Cooking the Polenta, Chicken & Beans
  7. Put Milk, Water, Oil and Vege stock concentrate for the Polenta, into the TM bowl. 

    Heat 14 mins/100/Spd 3.

    Put Varoma (containing chicken) on top. Cook 18 mins/100/Spd 4.

    Meanwhile, mix Beans with Oil and Garlic on lined Varoma Tray.

    Put Polenta and Cream into TM bowl. 

    Cook 10 mins/100/Spd 4.

    Remove Varoma, add parmesan to Polenta. Mix 10 Sec/Spd 4.

  8. Crispy Asparagus Wrapped Prosciutto (OPTIONAL)
  9. 1. Cut each slice of prosciutto in half lengthways.

    2. Wrap the prosciutto around the asparagus spear, leaving the tip exposed.

    3. Grill for 3 mins at 200C, rotate and grill for a further 2-3 mins until crispy (but not burnt!).

  10. Serving
  11. 1. Cut each breast into 6 pieces (3 each).

    2. Put Polenta, Tomato Sauce, Beans & Asparagus (If using) onto plate.

    3. Enjoy!

Tip

If only serving two people, freeze one of the breasts after rolling to use another time.

    Smile OMG the creamy polenta is to die for - such a nice change from the normal pasta, potato or rice ~ I make half the quantity and a little less polenta to the mix, also I used butter instead of oil ~ thank you for a great recipe

    The instructions were easy to follow, however the chicken stuffing and sauce recipe appear to be mixed up (first 3 steps).  Some suggestions on assembling the chicken involtini would be helpful  tmrc_emoticons.)

    Cooked this tonight and it was amazing. However it is missing the steps for putting the chicken together, so I winged it. This will be making it onto a plate again in our house.
