- 1/2 small red onion
- 185 g Laksa paste (bought or homemade)
- 1 litre chicken stock
- 250 g cold water
- 2 torn kaffir lime leaves
- 2 cloves crushed garlic
- 2 tablespoon Vegetable Stock Paste Concentrate
- 400 g Thigh chicken fillets, chopped
- 165 g coconut milk
- 1 tablespoon chilli oil
- 10 g fresh lime juice
- 1 tablespoon spicy sweet chilli sauce
- 1 package Bean sprouts, garnish
- Fresh Corriander

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add onion into mixing bowl and chop for 5sec/Speed 8. Add laksa paste and cook for 2mins/90C/"Counter-clockwise operation" /"Gentle stir setting" . Scrape down sides of bowl.
Add in liquid soup base, water and kaffir lime leaves and cook for 12mins/100C/"Counter-clockwise operation" /"Gentle stir setting" . Add garlic, vegetable stock, chicken stock and chopped chicken and cook for 15-20mins/100C/"Counter-clockwise operation" /Speed 1. Add coconut milk and stir for 3mins/100C/"Counter-clockwise operation" /"Gentle stir setting" .
Add in chilli oil, lime juice and spicy sweet chilli sauce and stir for 3mins/"Counter-clockwise operation" /Speed 1. - Place noodles into thermoserver or heat proof bowl and pour enough boiling water to cover the noodles on top. Place lid on top and leave for 2mins. Strain when finished
- Place noodles into serving bowls and pour soup over the top. Place bean sprouts and fresh corriander on top of each serving

Replace chicken with any meat, note this will change the cooking time

Our household just loves this laksa, it’s delicious. The recipe is slightly confusing with the reference to “liquid soup base” but I just add the chicken stock in that step and skip the extra water given other’s comments that the soup is too runny. For us, it turns out perfectly. I also cook the chicken for 15mins and then add veggies (carrot, capsicum, Chinese broccoli or whatever’s in the fridge) and then cook for a further 5mins. Finally, I use a full tin of ayam coconut cream or coconut milk (whatever’s in the pantry). Yummmm!

Made this tonight and it was DELICIOUS! I also got confused with "Liquid stock base".. I presumed it meant the 1 litre chicken stock (I used Campbell's Real Stock). Well, that's what I added for that step, and it turned out beautifully. I only had coconut cream instead of coconut milk, and it was fine. My son said it was better than a restaurant lol so that was pleasing. Will make it again for sure!

Just made this for first time. Used 1 litre of commercial chicken stock and 1 heaped tablespoon of chicken stock concentrate (thermomix made) and no extra water. Should have used more laksa paste and more coconut cream but was very tasty. Definitely will make again and use prawns as requested by my husband. Thanks for recipe.

Had my husband follow the recipe and he had no problem.
My interpretation is that the the 'liquid stock base' is what you are making with the water/kaffir/stock mix.
If you ignore the three words 'liquid stock base' the recipe reads well and works!!

I was confused about the liquid soup base also. Assumed this meant the stock, so added it before realising my mistake. As it wasn't listed in the ingredients I had committed to the recipe already...
The end result was pretty disappointing. It was more like a spicy chicken noodle soup rather than a creamy laksa. I threw in some extra coconut milk, lime juice, fish sauce and a bit of sugar to try and save it. I won't be using this recipe again.

Hope this is right but I assumed the "Liquid soup base" was the 1 litre of Chicken stock cause when adding the ingredients in the order they are listed that is what should go in at that stage of the recipe. Then when it says to "add Vegetable stock, chicken stock" I assumed it means the 2 Tabs of Vegetable stock Paste concentrate (or Chicken) Hope that helps (and hope Im right ) It was very yummy.

Like everyone is asking... what liquid soup base and how much?? This recipe makes no sense so I can't understand how it is rated so highly and is a featured recipe of the day?

I am confused. It does say to add "liquid soup base" but then doesnt mention it anywhere in the list of ingredients. I see a couple of people have asked the same question but the answers still arent that clear.
I know what liquid soup base IS, but what sort are we adding and how much of it? I am unsure how so many people seem to have made this recipe, particular those who "followed it exactly" when the instructions are unclear.
Was keen to make this tonight but am now writing my grocery list for the day and cant figure out what I am meant to be getting.

Beautiful laksa, thank you, even my kids loved it. I had no chicken stock so omitted that along with the extra water, instead added a whole 230g jar laksa paste, 400g can Coconut milk, plus Fried Onion Shallots at the end for that bit of crunch!
