Chicken, Leek & Mushroom Pie

Ingredients

Cream Cheese Pastry

  • 115 g plain flour
  • 50 g Butter, cubed
  • 125 g Cream Cheese, Cubed

Pie Filling

  • 2 slices bacon
  • 1 tbsp fresh thyme leaves
  • 10 g oil
  • 10 g Butter
  • 2 sticks Leeks Washed & Sliced
  • 600 g Chicken Thighs diced
  • 1 tbsp flour
  • 400 g water
  • 20 g Veg Stock Concentrate
  • 1 tbsp Sour Cream OR Cream Cheese
  • 10 pieces mushrooms, sliced
  • 1/2 --- cup frozen peas

Recipe's preparation

    Chicken, Leek & Mushroom Pie
  1. 1. For the pastry. Place the flour and butter into the bowl and mix. 10Sec/Sp1

     

    2. Add the cream cheese and combine. 1Min/Dough mode

     

    3. Remove the dough from TM and push into a disc shape, wrap in plastic and place in fridge for aprox 30mins (while you make the pie filling).

     

     

     

    4. For the Pie Filling. Chop up the bacon in TM. 3Sec/Sp6

     

    5. Add Sliced Leek, Thyme leaves, oil and butter. Cook for 3mins/100C/Sp1 Reverse

     

    6. Add Chicken, flour, water, stock and either sour cream or cream cheese. Cook 15Mins/100C/Sp1 Reverse. 

     

    7. Add mushrooms and peas. Cook 5Mins/100C/Sp1 Reverse. Empty the pie filling into a large rectangular baking dish. 

     

    8. Preheat oven at 180C.

     

    9. Roll out the pastry the size of the baking dish and place it on top of the filling, piercing a few holes into the pastry. Decorate with pastry offcuts if desired.

     

    9. Bake in 180C oven for 35-40mins, until pastry is browned.

    Thanks for pointing out the omission of the leek in the method. It's been rectified in the recipe. Yes, do decrease the water by 100-150g if you want less gravy. I'm unable to give that option on the ingredient list template.

    This pie is so yummy I have frozen it as well

    i only used 300 of water instead of 400

    and yes it doesn't say when to add leeks I added them with oil

    This flavour combination is great, after reading comments I reduced the water by 150ml added a little more flour and added the leek with the bacon (in that stage) yummy...we had this filling in vol au vents

    Only used 250g water for the filling and it was still way too runny, turned out more like soup. Flavour good though.

    Was a very yummy combo, loved the pastry but actual pie mix was way too runny.Drained most of liquid out  and it was great. Also when do we add the leek?
