Chicken tikka
- 800 g boneless skinless chicken thighs, cut into cubes (3 cm)
- 1 tsp Kashmiri chilli powder
- 1/4 tsp ground turmeric
- 1 tsp salt
- 1/4 tsp ground cinnamon
- 2 tsp ground cumin
- 1 tsp Ground Coriander
- 2 tsp garam masala (see Tips)
- 1 tbsp brown sugar
- 1 tbsp garlic paste
- 1 tbsp ginger paste
- 1 tbsp tomato paste
- 100 g natural yoghurt
Masala
- 40 g Ghee
- 1-2 brown onions (appox. 180 g), cut into quarters
- 2 tsp ginger paste
- 1 tsp garlic paste
- 6 cardamom pods (green)
- 1 tsp Fenugreek seeds
- 1/2 tsp ground turmeric
- 1/2 tsp Kashmiri chilli powder (optional)
- 100 g pouring (whipping) cream
- 60 g tomato paste
- 1 tsp brown sugar
- 1-2 pinches salt
- 1-2 pinches ground black pepper
- fresh coriander, leaves only, for garnishing
Recipe's preparation
- Place a bowl onto mixing bowl lid and weigh chicken into it. Set bowl aside.
- Place all remaining Chicken tikka ingredients into mixing bowl and blend 10 sec/speed 9 or until a smooth paste. Transfer into bowl with chicken and stir well to coat. Cover with plastic wrap and place into refrigerator to marinate for a minimum of 20 minutes or overnight. Clean and dry mixing bowl.
- Place ghee into mixing bowl and heat 3 min/Varoma/speed 1.
- Add onion, ginger paste and garlic paste and chop 3 sec/speed 7.
- Scrape down sides of mixing bowl with spatula and cook 10 min/100°C/speed 1.
- Add cardamom pods, fenugreek seeds, turmeric, chilli powder (optional), cream and reserved chicken with marinade and cook 4 min/100°C/"Counter-clockwise operation" /speed"Gentle stir setting" .
- Add tomato paste, sugar, salt and pepper and cook 15-20 min/90°C/"Counter-clockwise operation" speed 1, without measuring cup, until sauce has thickened and chicken is cooked through.
- Transfer into a serving bowl. Garnish with coriander and serve warm.

Doubled the recipe and it turned out lovely. Definately making this again. I added fresh ginger and garlic instead of the paste (only as I didn't have any). I used butter, not ghee (as I never buy it). At step 7, I moved it over to the cook top. But thats just a personal preference of mine with all curries in general. With the Masala, I used coconut cream instead (only as I didn't have cream). Yummie recipe to save and make again, and again.

Ohh wow, this is so delicious, the flavour is amazing. I used coconut oil and celery instead of onion due to allergies and also used natural youghurt instead of the cream.

This is amazing! Super delicious - my four year old scoffed 3 bowls.
I cook triple the sauce recipes and freeze in portions - then take defrost night before, marinade during the day, then cook on the stove when needed.
I also used more yogurt instead of cream as I prefer the taste.

Fantastic, will do this again for sure, a huge hit. I doubled the saucy stuff, which soaked into rice beautifully.
Note to self, try with coconut cream instead of cream, as per suggestion.

Thermomix in Australia: Hi Thermomix, I just noticed your comments above after I made the dish. My chicken got shredded as well (even on 0.5 because I had the feeling 1 would be too quick). In the last step the recipe says reverse speed 1. In your comments you say it should be reverse function on speed soft. I definitely think that is the correct option, maybe you can change this in the original recipe to avoid disappointments for others. Thanks again for the great recipe, loved it

Flavour was amazing but my chicken got shredded as well, chicken pieces were definitely big enough as I read through the comments first. Next time I'll put it on the spoon instead of 1. But like I said flavour was amazing, everyone loved it. Definitely a keeper

Another OMG here folks...this recipe is the BOMB 👍...flavour is sensational...10/10! I used 1kg chicken in my Thermie 31! Big chunks of chicken and cooked it for 3 minutes less than stated. "It's simply the best!"

Delicious! So glad I tried this! I had about 900g chicken so I threw it all in to TM5, thinking I might have to add a little more cream but it was fine. Otherwise I followed the recipe exactly. The Kashmiri chilli powder is relatively mild and adds just enough warmth to a very flavoursome mix. My youngest added some yoghurt to his last night but he then ate another bowl for breakfast so clearly he's a fan. Usually I make recipes to the letter the first time and then change them here or there after that, but I won't be changing this recipe at all. We loved it! Thank you for sharing it Thermomix!

Sorry to hear your final result turned out differently.
All we could suggest, is that the pieces of chicken were too small and subsquently shredded. The Recipe Developers, in our test kitchen, use a ruler to measure the size of the items being added to the bowl. This is a rule to maintain a standard with all test results in recipe we test inhouse.

Definite make again recipe. I used garlic cloves and pickled ginger instead of paste, butter instead of gee and yellow mustard seeds instead of fenugreek as I already had these on hand. I also left the chilli out altogether. Very easy to make.

Hi Kochipoik,
Please be aware that in step 3, the speed is shown as speed 1 (one). For safety reasons, the heating element can't be used on speed 7. The TM setting in step 3 is: 3 min/Varoma/speed 1.
In step 4, the onion, garlic paste and ginger paste are chopped on speed 7, however the heating element isn't used.
The chicken should not shred when using the reverse function ("Counter-clockwise operation" ) on speed "Gentle stir setting" (soft). We tested this recipe in house at least three times and the chicken didn't shred in any of our tests.
We hope you try making the recipe again - it's one of our most popular!

I had a few minor issues...
I had a few minor issues
- The speed for the paste was too high - it flung the sauce on the sides of the bowl so it could no longer mix. Worked better on speed 4
- Step 3 has an error - the heat is disabled over speed 6, so I did it at speed 4.
- I also prefer chopping onions at a lower speed - usually 5 seconds speed 5, at high speeds I've found you're more likely to get unevenly chopped onion as large pieces are flung to the sides
- The chicken got shredded! Not sure exactly why, but I wasn't left with any whole pieces of chicken - most of the chicken was shredded quite small, with only a few whole pieces.
- For some reason I found the sauce a touch grainy.
- I didn't need the second lot of sugar, and I added more chilli powder and salt to taste.
The finished dish was pretty good, although I don't think it was as good as my usual tikka masala recipe (from The Little India Cookbook, which I've converted to the Thermomix) and I wonder if it would be better if you let the spices and tomato cook for a while before adding the cream and tomato?

Delicious! Perfect depth of flavour. Error at step 3 - speed should be 6 not 7 (my TM5 alerted heat disabled at speed over 6). I used 40g butter instead of ghee and for chilli I added a sprinkling of dried chilli flakes for both parts as I didn't have chilli powder and it was good. I used fresh ginger and garlic (3 cloves + 2 cloves). Will definitely make this again.

I split the paste in half and made a chicken tikka masala and a chana (chickpea) tikka masala. They were both very nice and rather mild and ever so slightly sweet. If i was served this in a restaurant I'd be pleased with the meal.My impression is that the recipe serves 4 rather than 6. Can't wait for the new cookbook

Dont be put off by the long list of ingredients...
Don't be put off by the long list of ingredients. Worth it. And even better if you leave for a day after cooking then finish off by warming up in a slow oven for about ab hour to round out the flavours. You with some toasted slivered almonds and a sprinkling of coriander. Did I mention cauliflower rice ....

Just finished this dish, had all the ingredients on hand except the cream, used coconut cream instead. Don't think it affected the taste. Absolutely quick and easy to prepare and delicious to eat. Hubby said he would pay for this in a restaurant. After this little teaser, can't wait to get the book.
