Chilli and salad for tacos

Ingredients

Salad

  • 2 Hard boiled eggs, peeled and halved
  • 1/4-1/2 Iceberg Lettuce
  • 2 Roma tomatoes, quartered
  • 1/2 cucumber, roughly chopped
  • 2 tablespoons whole egg mayonnaise

Chilli

  • 1 brown onion, peeled and roughly chopped
  • 1/2 red capsicum, roughly chopped
  • 2 bacon rashers (short cut), roughly chopped
  • 1 tablespoon olive oil
  • 750 g Beef mince
  • 200 g Sweet chilli sauce
  • 125 g hot chilli sauce
  • 1 tbsp Mexican Chilli Powder
  • 400 g corn kernels, drained
  • 400 g red kidney beans

Recipe's preparation

    Salad
  1. Add all salad ingredients except mayonnaise and chop 5 sec speed 4

  2. Add mayonnaise and combine 10 sec counter-clockwise operation speed 2

  3. Set aside

  4. Clean and dry bowl

  5. Chilli
  6. Add brown onion, red capsicum and bacon rashers to bowl. chop for 5 seconds, speed 4

  7. Add oil and saute for 3.5m, varoma,counter-clockwise operation, speed 1

  8. Add mince and saute for 3.5m, varoma,counter-clockwise operation, speed 1

  9. Add sweet chilli sauce, hot chilli sauce and chilli powder and cook 20minutes, 100 degrees, counter-clockwise operation speed 1

  10. Add drained corn and kidney beans and heat through for 4 minutes 100 degrees, counter-clockwise operation speed 1

  11. Serve with tacos or wraps with salad.


    Sour cream and grated cheese and extra chilli can be used for additional toppings

    Not too bad. Meat is a bit runny for tacos and not so sure on the salad.
