Malaysian chicken curry (nonya style)

  • 2 onion, spanish
  • 3 cloves garlic
  • 3 cm ginger
  • 1 stalk lemongrass, or the tube from Woolworths/Coles (about 1 tbs)
  • 250 g candlenuts or cashews or unsalted peanuts, Asian shops will sell candle nuts
  • 2 level tablespoons oil
  • 3 level tablespoon Malaysian curry powder (Clive of India brand) or Babas meat masala curry powder avilable from Indian & Asian storesor
  • 2 teaspoons Ground Coriander
  • 2 teaspoon ground cumin
  • half teaspoon ground tumeric powder
  • 400 g coconut milk (or light) or 270ml
  • 250 g tomotoe sauce
  • 1.5 - 2 teaspoon salt
  • 1kg - 1.2k --- cubed chicken breast

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    1. Blend onions, garlic, lemon grass, ginger and nuts for 15sec/speed 7
  1. 2. Add 1 cup of water in for 15 sec/speed 7

    3. Take out the mixture and set aside

    4. Place the oil (no need to clean the TM bowl) for 2 minutes/varoma/speed 1

    5. Add the reserved mixture to the TM bowl

    6. Add the spices, 400 ml coconut

    7. Saute for 4minutes/varoma/reverse/speed spoon (can stop mid way and mix)

    8. With your spatula mix the sauce in

    9. Add the chicken and cook for 20 minutes/varoma/reverse/speed spoon and MC off (replace with strainer)

    What is meant by "tomato sauce" in the ingredients list? paste or puree? i assume not ketchup!

    Loved it but found the cicken breast too dry. Tried it with diced skinless thigh.. Was great!
