Ingredients
Tomato Glazed Meatloaf
- 600 g Beef mince, Topside Lean
- 1 piece carrot, Large (peeled & Grated)
- 1/2 cup --- breadcrumbs
- 1 --- parsnip, Large (peeled & Grated)
- 1 --- egg white, Lightly Beaten
- 3 tbsp tomato sauce
- 1 tbsp Worcestershire sauce
- 1 pinches salt, to taste
- 1 pinches pepper, ground, to taste
- 2 tsp mustard powder, dry
- 1 1/4 cups --- evaporated milk, Light
Glaze
- 1.4 cup tomato sauce
- 1.2 tsp mustard powder
- 1 tbsp brown sugar

- Lightly spray a deep 23cm x 13cm loaf tin with vegetable oil spray. Line a baking tray with foil and spray it with vegetable oil spray.
- In the Thermomix bowl, combine the tomato sauce, Worcestershire sauce, salt, pepper, and dry mustard powder. Mix at speed 5 for 10 seconds until well combined. Set this sauce mixture aside.
- Add 3 tbsp Tomato Sauce

Mix at speed 5 for 10 seconds until well combined.
Set this sauce mixture aside. - Without cleaning the Thermomix bowl, add the lean topside mince, grated carrot, grated parsnip, breadcrumbs, and egg white. Mix at speed 4 for 20 seconds or until the ingredients are well combined.
- Add the previously prepared sauce mixture to the meat mixture in the Thermomix bowl. Mix at speed 3 for 15 seconds.
- Gradually add the evaporated milk while mixing at speed 3 until the mixture is well combined. The mixture might be quite wet.
- Press the meat mixture into the greased loaf tin. Then, turn the tin upside down onto the foil-lined tray, leaving the loaf tin still in place over the meatloaf.
Bake in the preheated oven for 15 minutes. - Carefully remove the loaf tin, brush the meatloaf with the glaze mixture, and return it to the oven.
Continue baking for an additional 1 to 1.5 hours or until the meatloaf is cooked through, and the glaze is caramelized.
