Mexican Chicken - One pot!

  • 1 red capsicum, Chopped
  • 1-2 carrots, Chopped
  • 1 zucchini, Chopped
  • 1 canned kidney beans, Drained and rinsed
  • 1 canned sweet corn kernels, Drained and rinsed
  • 4-5 boneless skinless chicken thigh, Cubed (approx 500g)
  • 1 Canned crushed tomatoes
  • Mexican Spice Mix, (Measure with your heart - see tips for mix)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Add and cook!
  1. Drain and rinse kidney beans and corn

    Add carrots, zucchini and capsicum - chop 5sec speed 5. Scrape down bowl sides

    Cook off 5min, 100deg, speed 1

    Add tomatoes, chopped chicken, Mexican spice mix, corn and kidney beans.
    (A little mix with spatula helps to get it moving)

    Cook 25min, 100deg, speed 1 on reverse

    Serve with or without rice, with your own additions.
    Personal favourite is served with corn chips!

Tip

Mexican spice mix
I usually add roughly 1 tabs of this mix to 500g protein, adjust to your own tastes

4 tabs cumin powder
2 tabs salt
1 tabs chilli powder
1 tabs sweet paprika
1.5 teas garlic powder
1.5 teas black pepper
*mix together and store in airtight jar.
personally add all to the jar and shake!!
