Pasta with Chicken , Lentils and Spinach

Ingredients

2 portion(s)

  • 1/2 brown onion
  • 2 cloves garlic
  • 15 g olive oil
  • 100 g Minced chicken
  • 100 g red lentils
  • 750 g water
  • 1 tbsp veggie stock paste
  • 2 tbsp tomato paste
  • 250 g pasta, shell or spiral
  • 120 g Spinach Leaves

Recipe's preparation

    Saute onion and mince
  1. Chop the onion and garlic 3sec speed 7.

    Add the olive oil and saute 2 mins / Varoma / Speed 1.

    Add the mince and brown for 3 mins / Varoma / Counter-clockwise operation /Speed 1

  2. Cook Lentils and Pasta
  3. Stir in the Lentils, water, stock paste, tomato paste and pasta and cook for 12 mins / 100 C / Counter-clockwise operation / Speed 1.

    Water should be absorbed and pasta and lentils soft.

  4. Serve
  5. Spoon into serving bolws and combine with spinach leaves before serving.

Tip

You can mince the chicken yourself in the Thermomix before starting the recipe instead of buying mince.

Can also substitute turkey or pork mince.

    Found this a little bland - I might try to add a tin of tomatoes next time - ad perhaps some spices.

    I use dry lentils.  If you want to try it with tinned lentils then you would probably need to use less water and maybe reduce the cooking time.
