For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- 1. Add onions and ghee to bowl - 4 seconds, speed 5
2. Sauté onions - 5mins, varoma, reverse slowest speed
3. add 600g of meat, 7 spices salt and pepper to taste - 9mins, varoma, slowest speed, reverse
MEANWHILE
fry off your diced potatoes and sauté your mushrooms on the stove
once the mince is done, add fried potatoes and mushrooms to the bowl, 3mins, varoma, reverse slowest speed
at this stage taste and add salt/pepper/7spice to your preference
serve with Lebanese rice (my recipe is on recipe community) and some Greek yogurt mixed with some minced garlic and salt

Tip
- fry off some pine nuts and stir through when done for some crunch
- If the mince has too much liquid when done, place simmering basket on top and tip out the juices before adding the potatoes and mushrooms (simmering basket is to keep the mince in the basket when tipping, do not leave it in the bowl when going to the next step!)
