Slow Cooked Silverside/Corned Beef

  • 1 corned beef silverside, 600-1200gms
  • 2 onions, Quartered
  • 2 carrots, Roughly chopped
  • 3 potatoes, Peeled, roughly chopped
  • 3 bay leaves
  • 3 sprigs fresh thyme, Leaves only
  • 3 sprigs fresh flat-leaf parsley, Leaves only
  • 2 tablespoons Vegetable stock paste
  • 1 tbsp Dark Brown Sugar
  • 4 garlic cloves
  • 3 dashes apple cider vinegar
  • to taste pepper, ground
  • 1-2 litres water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cooking the Silverside using the Slow Cooker Function
  1. 1. Place herbs (minus bay leaves) into the Thermomix bowl, and chop 3 seconds, speed 7.

    2. Add in remaining ingredients, except the water. Once all ingredients are in the bowl, including the silverside. Pour water in to cover it, it should reach just below the 2ltr mark, depending on your size of Silverside, as per the photo.

    3. Press slow cooking function, adjust the temperature to 98 degrees, and set the time for 8 hours. Please note depending on the size of the silverside for timings, however I have cooked this before with a 900gm, for 6.5hours. I just checked the temperature, using my Meater+. Thermometer, however you could use any meat thermometer you just want to make sure the internal temperature is between 63-71 degrees.

    4. Remove the silverside, and place into Thermoserver, while preparing the sauce below.

    OPTIONAL;
    5. Strain the vegetables, from the stock liquid, keeping the stock liquid aside to make a sauce with some leftover vegetables. Or use the vegetables as your side dish, with mashed potato and make a white or mustard sauce from Cookidoo.
