Stuffed Chicken Breast

Stuffed Chicken Breast

  • 4 chicken breasts
  • 200 g feta cheese, Cut into 2-3cm cubes
  • 20 sun-dried tomatoes
  • 3-4 sprigs fresh basil
  • Salt and pepper, to season

Recipe's preparation

    Stuffed Chicken Breast
  1. Add feta, sun-dried tomatoes and basil to mixing bowl and chop 5 seconds, speed 5.5.
  2. Using a mallet or rolling pin bash out chicken breasts slightly.
  3. Cut a slit in each chicken breast to form a pocket. Season with salt and pepper.
  4. Fill each pocket with filling and fold over to partially enclose.
  5. Place onto baking tray lined with baking paper and cook for approximately 30 minutes in a 200°C oven.

Accessories you need



We always top this with Skinnymixers Creamy Mustard Sauce which is free on her website.

Serve with steamed vegetables and mash or your choice of side.
You can add any ingredients or herbs to the filling. Play around with the fillings. It's a super quick, easy and tasty midweek dinner.
The amount of sun-dried tomatoes is rough. I generally use a small tub from the deli of the supermarket.
