Enchiladas

  • 150g Cheddar cheese
  • 1 long red chilli, or To Taste
  • 2 cloves garlic
  • 1 teaspoon cumin seeds
  • 1 brown onion, halved
  • 2 cans diced tomatoes
  • 500g chicken breast, Sliced into Tenderloin Size
  • 100g carrot, Quartered
  • 100g zucchini, Cut into Chunks
  • 70g cauliflower, Brocken into Florets
  • 70g broccoli, Broken into Florets
  • 1/2 red capsicum, Cut into Chunks
  • 1 can Black Beans, Rinsed and Drained
  • 1 can Corn, Rinsed and Drained
  • 10 Tortilla wraps, Or 5 Large Tortilla Wraps
  • 2 Avocados, Sliced to Serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Enchiladas
  1. 1. Preheat oven to 200 degrees.

    2. Place Cheese into mixing bowl and grate 6 sec/speed 8. Set aside.

    3. Place Chilli, Garlic and Cumin Seeds into mixing bowl and chop 7 sec/speed 9.

    4. Add the Onion and chop 4 sec/speed 7.

    5. Add the 2 Tins of Tomatoes.

    6. Place Chicken Breast onto the Varoma Tray, place onto Varoma Dish (you can add extra Sliced Chicken into the Dish here if you have it, but leave some gaps for the steam to reach the Chicken above) and place on top of mixing bowl lid.

    7. Cook 25 mins/Varoma/speed 1 (or until the chicken is cooked, extra time will be needed if you added more Chicken to the Veroma Dish in the previous step).

    8. Set Chicken aside in Varoma.

    9. Pour half of the tomato sauce into the oven dish, set the other half aside. DO NOT CLEAN BOWL.

    10. Place Carrot, Zucchini, Cauliflower, Brocoli and Capsicum into mixing bowl and chop *4 sec/speed 7. *Chop again if still too chunky.

    11. Add in Half the Cheese and the Chicken to mixing bowl and mix 4 secs/speed 5 (this will shred the chicken and combine it all for you!)

    12. Mix in the Black Beans and Corn5 secs/Counter-clockwise operation/speed 2

    13. Stir with spatula to make sure all combined.

    14. To prepare the Enchiladas -
    Take a Tortilla and spread some of the Cheese/Veg/Chicken mixture on. Wrap up the Tortilla and lay in the oven dish seam side down on top of the sauce. Continue wrapping each Tortilla and filling the dish.

    15. Pour the rest of the tomato sauce over the top and sprinkle with the remaining Cheese.

    16. Cook in the oven for about 15 mins to melt the cheese and crisp it all up.

    17. Serve with Sliced Avocardo and Sour cream with a side of Rice or Salad
