Vietnamese Meatball Noodle Soup - Spicey

  • 1 tbsp vegetable oil
  • 2 clove garlic
  • 1 red chilli
  • 1 bunch coriander
  • 2 tablespoons ginger
  • 500 grams chicken stock
  • 999 grams water
  • 2 star anise
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 500 grams chicken
  • 4 spring onions
  • 125 grams vermicelli noodles or other prefered noodle
  • 1 bunch pak choy
  • bean sprouts (garnish)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1.  

    1.     Place ginger in the TM and blend 3 secs / Speed 7.  Take roughly half out & set aside for broth.  

    2.     If using chicken fillets - Place chicken in TM and mince. (If using chicken mince skip to step).

    3.     Add spring onions, coriander, chilli, and fish sauce into TM bowl - 3 times/1 sec/Closed lid/Turbo.

    4.     Form into small meatballs (10 cent piece) and place into varoma (no paper needed). I prefer tiny 1cm meat balls – size to taste.

     

    5.     In TM, for the broth - add remaining ginger, chicken stock, water, star anise, soy sauce, brown sugar, fish sauce & cook 4 mins/ 90/speed 1.

    6.     Place varoma with meatballs on top of TM and cook 12 mins/Varoma /speed1

    7.     When meatballs almost cooked, add noodles to TM bowl & pak choy to varoma. Cook a further 4+mins on Counter-clockwise operation/ speed 1/100/ Speed 1

     

    8.     Serve immediately (broth, noodles, meatballs, pak choy) with sides of spring onions or coriander or lemon.

Tip

Any meat or mince is suitable to use.

The meatballs can be a side dish using a sweet chilli sauce dip

    Loved this soup , I added a sliced fresh red chili to the broth and grated a zucchini (squeezed) with the chicken for added v veg!!

    Love the flavours of this recipe and will definately make again.  A couple of things to mention though, I used thigh fillets and fresh ginger so took a lot longer to mince.  I would probably even suggest chopping the ginger and the coriander (I used the root as well) before mincing the meat because I still found big chunks of both.  Also, I'm guessing the 2nd tbsp of ginger needs to go in the broth.
