Waitangi Day Lamb Shanks meal

Lamb Shanks meal

  • 2 small lamb shanks
  • 1 brown onion, peeled, chopped in 2
  • 3 cloves garlic
  • 1 carrot, peeled and chopped
  • 1 stalk Celery
  • 2 tbsp vege stock
  • 1 litre water

  • 2 potatoes, chopped
  • 1 kumara, chopped
  • 1 carrot, sliced

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Lamb Shanks Meal
  1. Chop the onion, garlic, carrot and celery, speed 7 for 2 seconds, scrape down and add stock and water. Put the lamb shanks in the simmering basket with the bones towards the middle - they will sit up through the hole in the lid to start with. Put the simmering basket in the bowl, put the lid on and put the measuring cup upside down over the bones that are poking through the lid. Set to 99 minutes, 100 degrees, speed 2. 

    When that is done, take the lid off, push the shank bones down so the entire shank is now inside the bowl - the meat is tender so it will start to fall off the bone and you can wiggle them around. Put the lid back on (check you don't need more water, it will need to be about 500 to 700 ml mark), put the prepared potato and kumara on the Varoma dish, lid on and set to Varoma, 20 minutes, speed 2. For the last 5 minutes put the beans and carrots on the Varoma tray to steam.

    To serve, arrange the shank and vegetables on a plate - whizz the vegetable gravy until it is smooth, 10 seconds on speed 8, spoon over the shanks and enjoy!

    Yummy and easy.

    I wasn't sure whether to remove the steaming basket at the 20 min remaining mark so I did it and hoped for the best. It worked out fine. Lamb shanks couldv'e been a tad more tender but were still great. Having small lamb shanks meant less meat than we like so we would use a chunk of lamb next time and see how it goes. flavour was great without adding any extras. Next time will reduce amount of potatoes and kumera and increase amount of carrots and beans. Thank you for posting. P.S, read up on Waitangi Day, how awesome, wish australia would get with the times and have a treaty as well!

    I cooked this tonight. I put the shanks in the varoma as they were a bit too long and the lid wouldn't go on properly. I cooked it on varoma setting. It was very tasty I will be doing it again. 

    Love my thermomix!

    I've only just got my Thermie and this is the 2nd recipe i've made so far so it was yummy! I probably wouldve added some rosemary but didnt have any.  I love eating clean food so this was perfect.  I used the vegetable paste that id made from scratch as my stock.  Tasted delicious! Glasses

    Yum, i added the rosemary sprigs to the varoma with lamb shanks.  Served up a bit of the sauce on the shanks and veges and poured the rest into soup bowls, fantastic soup, thank you tmrc_emoticons.)

    Delicious! I was a bit skeptical about cooking shanks in thermi but the meat was tender and falling off the bone - just as good as cooking in a slow cooker. I had to 'manipulate' my shanks into the basket but they did fit eventually. The sauce is delicious as a gravy but would also be beautiful as a soup with crusty bread for a 2 course meal. Hubby gave it the thumbs up!

    I made this today but instead of using the basket I used the varoma.  I kept the veg ingredients the same but I put four shanks in the varoma and lay some Rosemary twigs on top.  The liquid made the most divine veg soup as we prefer a brown gravy for the shanks.  Will do my shanks this way all the time as no fat to skim off if cooked in the crock pot.

    I made a few small

     changes to the recpie I didnt use the celery or the Kumara. I put 50g of tomatoe paste into the sauce as im not much of a fan of veggie sauces. My shanks were too big so I couldnt put them in the basket and steam the veggies at the same time.  I left them to cook the whole time hanging out the top and put 3 small potatoes quartered in the basket with the shanks to cook for the remaining 20 min. The shanks are delicious and at the point where the meat is starting to fall off the bone. While the sauce is nice I would prefer something a bit richer in flavour like red wine and herbs.
