  • 1 onion, roughly cut
  • 4 bacon rashers
  • 1 medium zuchinni, roughly cut
  • 6 eggs
  • 150 fat reduced chees, roughly cut
  • 3 heaped tablespoons Mixed Herbs
  • Salt and pepper
  • 130 gm Gluten free self raising flour
  • 50 gr Feta cheese (cubed )
  • 7 cherry tomatoes, halved
  • 1 sprig parsley

Recipe's preparation

  1. Oil silicone muffin pans


     

  2. Preheat oven to 150 C fan forced

  3. Chop onion or leek 2 - 3 secs speed 7,set asside

  4. Chop zuchini  5 - 8  secs speed 4 , set aside

  5. Grate cheese 4 secs , speed 8, set aside


     

  6. Place all ingredients in TM bowl , mix on REVERSE speed 4

  7. Spoon into muffin pans. Top with  parsley, fetta cheese cubed and  half cherry tomatoe if desired. Bake  40 - 50 mins until set and browned. Serve hot or cold. Good for lunchboxes. Can be done as mini muffins too.

Tip

 Silicone muffin pans are useful as gluten free baked goods crumble easily. These pies keep their shape and are easily removed from pans.
