  • 3 Potatoes (cut into 2cm cubes), Peeled and diced
  • Olive Oli
  • 5 spring onions, Chopped
  • 500 spinach leaves, washed, Chopped roughly
  • 6 eggs
  • Half bunch flat leaf parsley, chopped, Picked
  • salt and pepper freshly ground, To taste
  • Half bunch fresh chives, Snipped
  • Half lemon, Zest and juice

Recipe's preparation

  1. Fry potato cubes until lightly golden in a little oil in a large frying pan. Add spring onions and cook until softened. Crack eggs into TM bowl and beat  medium speed 10 seconds. Set aside. Clean bowl. Chop spinach roughly and place into varoma.add 500 g water and heat to varoma  speed 2 for 4 minutes to steam spinach. Empty bowl of water and drain spinach. Add spinach to bowl along with the herbs lemon zest and lemon,and pulse a few times. Add to egg mixture along with seasonings and combine evenly. There are two ways to cook this dish, the first is to combine with potato and onion in the frying pan and cook on medium low heat until eggs are set underneath then drizzle with a little butter or oil and browned under the grill. Alternatively place mixture in a greased ovenproof  dish and bake for the first  20 minutes covered then leave uncovered for another 15 minutes in a moderate oven. Offer a bowl of yoghurt with the kukuye.
