Mustard Brandy Chicken with Sweet Potato Mash (Variant from Gluten Free Wheat Free cookbook)

  • 4 skinless chicken breasts
  • 2 Bunches of Green Beans
  • 1 sweet potato, (sliced for steaming)
  • 40 g unsalted butter
  • 4 Eschalots or Spring Onion, (peeled and white part only)
  • 60 g brandy
  • 60 g Dry White Win
  • 3 tablespoon seeded mustard
  • 300 g chicken stock, *see tips
  • 120 g Lite Coconut Milk, (Cream can be used if preferred)
  • 1 tablespoon cornflour
  • Salt & pepper to taste
  • Garnish with Chives
  • 1 tablespoon Butter
  • 1-2 tablespoon Preferred milk

Recipe's preparation

    Method
  1. 1. Place Chicken in varoma, along with green beans and sweet potato. Set aside.

    2. Place butter and eschalots into bowl and chop for 5 secs on speed 5. Scrape down sides of bowl and saute for 4mins, Varoma and speed 2.

    3. Add brandy, wine, mustard and stock. Place varoma on top and cook for 15mins, varoma and speed 3.

    4. Check chicken if its cooked. It may need a further 3-5mins if necessary.

    5. Remove Varoma and place chicken and beans in your thermoserver.

    6. Add cream and cornflour to bowl and blend for 5 secs on speed 7.

    7. Cook for 2mins at 90C on speed 3.

    8. Pour sauce over chicken and season if necessary.

    9. Wash and clean bowl. Place sweet potato inside with softened butter and milk. Mix for 20secs on speed 5 to 6. Season if desired.

Tip

You can use chicken paste for the stock. Just mix 1/2T of stock past with 300g of water.
