Paleo warm potato salad

Ingredients

2 portion(s)

Warm Potato Salad

  • 20 g macadamia oil
  • 20 g balsamic vinegar
  • 1 red onion
  • 1 chorizzo sausage, sliced
  • 2 eggs
  • 200 g kifpler potatoes, cut into 2cm pieces
  • 8 Semi Dried Tomatoes
  • 40 g rocket
  • 20 g walnuts

Recipe's preparation

    Dressing
  1. Place macadamia oil and balsamic vinegar in TM bowl.  Mix speed 4 /5 seconds.  Set aside.  Don't wash the bowl.

  2. Salad
  3. Add peeled, halved red onion to TM bowl.  Chop 4 seconds/ speed 5.  Add sliced chorizzo sausage to TM bowl.  Saute 5 minutes/varoma/Counter-clockwise operation speed 1.

    Set aside.

  4. Place eggs and potatoes into steaming basket.  Place 500g water in TM bowl. Cook eggs and potatoes. 11 minutes/varoma/speed 1.

    Remove eggs.  Cook potatoes for a further 7 minutes.  Varoma/speed 1. 

  5. While eggs and potatoes are cooking start assembling your meal.  Place bed of rocket into a serving dish.  Add chopped semi dried tomatoes.  Add onions and chorrizo. Peel and quarter egg, and add to dish.  

  6. When potatoes are cooked, remove from steamer and add to dish.  Rinse and dry TM bowl. 

    Add walnuts to bowl and blitz on turbo, 1-2 pushes.

    Add potatoes to dish. Sprinkle with walnuts.  Drizzle with reserved balsamic and macadamia oil.

Tip

For a  non paleo version add some marinated feta.

Rocket can be substituted with baby spinach leaves

    Loved this one tmrc_emoticons.) i swapped out the chorizzi for bacon bits and didn't add walnuts. I think maybe next time though i would just add the red onion chopped as i like mine crunchy.

    Easy and delicious. I had to substitute because didn't have everything on hand: used baby spinach, almonds, half potato and half sweet potato and olive oil.
